المقادير :

حبتين بطاطس متوسطة - تونة أو طن - جبن مثلث - بقدونس أو معدونس بالتونسي
- عجينة سبرينق رول مربعة كبيرة الحجم - بيض أو عظمة بالتونسي
- ملح - فلفل أسود أو بالتونسي فلفل أكحل - فلفل احمر - كركم .

نبدأ بتحضير المكونات كالتالي :
نقطع البطاطس مكعبات ونقليها

ثم يقطع البقدونس ويذبل ببخار الماء حتى يخرج منه الماء باستخدام المشخلة
وقدر به ما مغلي حتى يذبل البقدونس ( دقيقة او دقيقتين )

بعد ذلك يتم خلط جميع المقادير البطاطس المقلي والتونة والبقدونس والجبن بعد تقطيعه
والبيض وشوي ملح وفلفل اسود واحمر وشوي كركم ( بكميات قليلة )
طبعا المقادير على حسب الكمية المراد طبخها
وأعتقد الصورة توضح لكم تجانس المقادير

بعد ذلك توضع كمية من الخليط على العجينة ويلف بشكل مثلث
أو مربع وللحم الحواف يستخدم قليل من البيض ويضغط بالاصبع

ثم يقلى البريك بالزيت المغمور مع ملاحظة الضغط على البريكة
حتى لاينفتح العجين وتلتحم المكونات ثم تقلب على الوجه الثاني
ودايما يقولون اول بريكة مو حلوة الثانية احلى ويبدو لي
ان كلامهم صحيح نظرا لحرارة الزيت المناسبة

وهذا هو الشكل النهائي للطبق ( طبعا مع الليمون )

المقادير

6 ورقات بوراك
6 بيضات
2 حبات بطاطس كبيرة
2 حبات بصل كبار
1/2 رطل (1/4 كيلو) لحم مفروم
6 حبات جبن
بقدونس
ملح
زيت للقلي

الطريقة

نقشر البطاطس ونغسلها ونضعها تطهو في الماء المغلي ونضع معها الملح. .1
نقشر البصل ونقطعه قطع صغيرة. .2
نغسل البقدونس ونقطعه. .3
نضع اللحم المفروم في المقلاة ونتركه ينضج. .4
نرحي البطاطس بعد النضج. .5
نأخذ ورقة جلاش ونضع فيها 2 ملعقة من البطاطس ثم لعقة هريسة ثم ملعقة بصل وبقدونس و3 ملاعق لحم ثم حبة جبن ثم بيضة ونطويها على شكل مستطيل مغلوق من الجهات الأربع ونقليها في الزيت الساخن .
