مقادير العجينة
3 مقادير دقيق
1 مقدار نشاء
مقدار غير كامل من زبدة ذائبة ( ثلاث أرباع لمقدارتقريبا )
ذرة ملح
3بيض
ماء + ماء الزهر للعجن
ملاحظة: بالشتاء يفضل ان يكون الماء دافئا

الحشو
3 مقادير لوز او اي مكسرات عندك
ثلاث ارباع المقدار سكر
قليل من القرفة
تخلط المقادير جيدا ويضاف عليها قليلا من ماء الزهر

الطريقة
في وعاء تخلط كل مكونات العجين وتعجن جيدا الى ان نحصل على عجينة متماسكة
تترك العجينة لمدة ساعة لترتاح قبل بداية العمل عليها
نفرد قطعة العجينة على شكل مستطيل وتوضع الحشوة بالوسط

توضع بالفرن وتترك الا ان يصير لونها ذهبي
وهي ساخنة يوضع عليها القطر او عسل ساخن وتترك لتتشرب قليلا
وتزين بحبات السمسم وهذا شكلها من قريب

حلوة القريوش

المقادير:
* كيلو غرام دقيق أبيض ناعم
* 250 غرام زنجلان محمص ومطحون
* بيضة كاملة
* اصفر بيضة واحدة
* نصف ملعقة صغيرة نافع مطحون
* نصف ملعقة صغيرة مسكة حرة
* ملعقة صغيرة خميرة الخبز
* ربع ملعقة صغيرة سمن
* كأس شاي ماء زهر
* ربع كأس خل
* قليل من الزعفران الحر
* قليل من الزعفران الاصطناعي
* كأس شاي زبدة
* قبصة ملح
* ماء دافئ للعجين
* زيت للقلي
* 3 ليتر عسل
* كأس شاي زنجلان للتزيين

طريقة التحضير:

* في قصعة، خلطي البيض، الزبدة،
السمن، الخل، الزنجلان، المسكة الحرة،
ماء الزهر، الخميرة، قبصة الملح والنافع.
* اضيفي الدقيق شيئا فشيئا حتى تحصلي
على عجينة لينة ومتجانسة.
* خلطي العجينة جيدا حتى تصبح متجانسة ولينة وإذا كان صلبة لينيها بقليل
من الماء.
* غطيها واتركيها ترتاح قليلا.
* قسميها إلى كويرات صغيرة، ثم مدديها وقسميها إلى مربعات صغيرة.
* بواسطة آلة خاصة بتقطيع الشباكية
(الجرارة) احدثي 3 تقاطيع في كل المربع،
على عرض 1 سنتمتر.
- قومي بفرد العجين و قطعيه على شكل مستطيلات بهذا الشكل

* بواسطة أصابع اليد خالفي التقاطيع
ثم إقلبي الحواشي في الوسط، وحاولي أن
تصنعي الشكل العادي للشباكية.

خذي صينية ورشي فوقها الدقيق، ثم
صففي الشباكية حتى تنتهي من كل العجينة.

* حمصي الزنجلان واتركيه جانبا.

* في كصرونة سخني العسل ثم احتفظي به ساخنا.
* في مقلاة خاصة بالقلي سخني الزيت جيدا، ثم اقلي الشباكية

وعندما تتحمر ويتذهب
لونها ارفعيها من المقلاة واغمسيها في العسل الساخن
