المحاجب اكلة جزائرية لا تقاوم
بسم الله الرحمن الرحيم

تعتبر
المحاجب على اختلاف اسماءها " المحجوبة . المختومة" من أكثر الاكلات شعبية
تتنوع طريقة
التحضير من منطقة الى أخرى. اما الوصفة التي سأقدمها هي " المحجوبة
البسكرية.
شرح مفصل بالصور

الطريقة الأولى

المقادير:

العجينة
1- 1كغ دقيق الاصفر (رقيق)
24- ملح + ماء + زيت

الحشو و طريقة التحضير

بصل مقطع رقيق
1- طماطم منزوعة القشرة
2- ملح
3- ثوم
4- فلفل اسود
5- فلفل حار حسب الرغبة

**نطبخ الكل في مقلاة مع قليل من الزيت للاشارة مقدار البصل ضعف الطماطم.

طريقة تحضير العجينة
نعجن الدقيق مع قليل من الماء والملح جيدا حوالي 20 دقيقة، ثم نشكل كوريات بحجم البيضة نترك
الكوريات على سينية لترتاح حوالي ربع ساعة.

ونضع الحشو

المقادير واللوازم :

العجينة
كيلو سميد رقيق او رطل سميد ورطل فرينة
ملعقة قهوة ملح
ماء
الحشوة
كيلو بصل
كيلو طماطم
ملح
فلفل اسود
فلفل احمر
ملعفتان زيت كبيرتان
قليل من الزيت للطاولة واليدين
يمكن اضافة القليل من الشحم
او اضافة الزيتون الاخضر
او اضافة اللخم المفروم
حسب الذوق

التحضير

العجينة
اخلطي الملح مع السميد ثم بلليه حتى يمكن تجميعه وغطيه بمنشفة مبللة واتركيه حينا .

الحشو

قطعي البصل إلى شرائح رقيقة وطويلة وقليها في الزيت على نار متوسطة إلى هادئة وغطها مع التحريك المستمرحتى تصبح شفافة وطرية .
انزعي
القشرة للطماطم بالسكرفاج واضيفيها إلى البصل مع الملح والتوابل وغطها
واتركيها تطهو على نار هادئة مع التحريك من حين لآخر حتى لا تلصق.

عودة إلى العجينة

ادلكي العجين جيدا براحة اليد حتى يصبح املسا وقابلا للفرد
بللي يديك بالزيت وشكلي كريات من العجين وضعيها جنب بعضها مع تذكر الترتيب

1عودي إلى اول كرية وافرديها كما في الصورة
على طاولة مدهونة بالزيت

2 لفيها تستطيع أن ترى الصورة بحجمها الطبيعي بعد الضغط عليها
3 ضعي ملعقة من الحشو والأفضل ان يكون باردا

4اكملي اللف والطي على شكل مربعات

ضعيها على الطاجين " صفيحة من حديد " تطهو من جهة ثم اقلبيها على الوجه الثاني
لا تحضري أكثر من ثلاثة محجوبات حتى لا يسيل سائل الحشو من العجين

ملاحظة1

نفس العجينة مع نفس طريقة اللف بدون حشو تسمى المسمن أو المعارك
وتقدم مع القهوة والشاي والحليب.

ملاحظة2

يمكن التفنن في تغيير الحشو
- السلق المغلى والمعصور والمطهو مع الثوم والطماطم.
- سمك الطون والطماطم والبصل والثوم والبقدونس.
- فتات السردين المقلي او بقايا شطيطحة السردين مع الثوم والبصل والطماطم.
