طريقة عمل كيكة الاوبرا من برنامج حورية المطبخ الموسم الثاني

المكونات

1. 150 غ لوز وبندق محمص ومطحون
2. 150 غ سكر ناعم
3. 40 غ طحين ابيض
4. 5 صفار بيض
5. حبة بيض كاملة
6. رشة ملح
7. 30 غ زبدة ذائبة
8. 30 غ سكر عادي
9. ملعقة صغيرة فانيلا

كريمة الزبدة بالقهوة:

1. 3 ملاعق صغيرة قهوة سريعة الذوبان (نسكافيه) مذوبة في نصف ملعقة صغيرة ماء
2. 250 غ سكر
3. 3 صفار بيض
4. حبة بيض كاملة
5. 100 مللتر ماء
6. 300 غ زبدة غير مملحة بدرجة حرارة الغرفة

جاناش: كريمة الشوكولا:

1. 200 ملل كريمة الخفق الطازجة
2. ملعقة صغيرة قهوة سريعة الذوبان (نسكافية)
3. 250 غ شوكولا مفرومة ناعم

جلاصاج بالشوكولا:

1. 80 غ شوكولا اسود مفروم
2. 80 ملل كريمة الخفق الطازجة

طريقة التحضير

1. يخفق بياض البيض مع رشة الملح الى ان نحصل على خليط ثلجي نضيف 30 غ سكر ونواصل الخفق للحصول على مرنج ثلجي ويترك جانبا
2. يخفق صفار البيض مع حبة البيض الكاملة والسكر الناعم (150 غ )خفقا جيدا الى ان يتضاعف حجمة ويكتسب لون ابيض تقريبا
3. بواسطة ملعقة او سباتولا نضيف المكونات الجافة (لوز وبندق محمص ومطحون والطحين) دون الافراط في التحريك والا تفقد الكيكة قوامها الاسفنجي
4. نضيف دائما بواسطة الملعقة بياض البيض برفق
5. تضاف كمية الزبدة الذائبة الباردة
6. نسكب الخليط في صينية مدهونة ومغطاة بورق شمع
7. توضع في فرن ساخن درجة حرارة 400 فهرنهايت لمدة 7 الى 10 دقائق
8. تخرج الصينية من الفرن وتنزع الكيكة من الصينية مباشرة وتوضع فوق شبك لتبرد

طريقة الزبدة بالقهوة: تجهيز القطر:

1. يوضع الماء مع السكر في قدر على النار ليغلي الى ان نصل الى درجة 112 او 116
2. يخفق صفار البيض مع البيضة الكاملة جيدا
3. نضيف القطر الساخن دون التوقف عن الخفق الى ان يبرد المزيج تماما (مهم جدا)
4. تضاف الزبدة تدريجيا مع الخفق المستمر الى ان يتضاعف حجم المزيج ونحصل على لون ابيض
5. نضيف القهوة المذابة ونخفق
6. نضع الكريمة في وعاء وتحفظ في الثلاجة الى حين استعمالها

طريقة جاناش: كريمة الشوكولا:

1. في قدر على النار نضع الكريمة الطازجة والقهوة الى درجة الغليان
2. تسكب الكريمة الطازجة المغلية مع القهوة على الشوكولا المفرومة ثم يخلط المزيج بواسطة خفاقة يدوية وليس كهربائية دون الاكثار من الخفقثم تترك لتبرد

طريقة جلاصاج بالشوكولا:

1. توضع الشوكولا المفرومة مع الكريمة الطازجة في قدر على النار الى درجة الغليان
2. تخلط خلط خفيف وتبعد من على النار وتترك جانبا

تزيين وتقديم كيكة الاوبرا

1. بعد ان بردت الكيكة كليا تقسم الى ثلاثة طبقات متساوية
2. توضع اول طبقة فوق قطعة كرتون مستطيل او مربع خاص بالحلويات او طبق تقديم مستطيل اومربع
3. تغطى بطبقة خفيفة من الجاناش (كريمة الشوكولا) توضع فوقها الطبقة الثانية من الكيكة وتغطى بطبقة من كريمة الزبدة بالقهوة
4. ثم نضع الطبقة الثالثة والاخيرة من الكيكة وتغطى بطبقة خفيفة من كريمة الزبدة بالقهوة
5. توضع الكيكة مباشرة في الثلاجة لتبرد وتتماسك فيها الكريمة
6. نخرج الكيكة من الثلاجة ويغطى بجلاصاج الشوكولا ثم يرجع الثلاجة ليبرد وتتماسك الشوكولا ثم نخرجها
7. نقطع الزوائد لتساوي الكيكة وتزينها حسب الزوق اما بالكتابة على وجهها او رسم اله موسيقية او استعمال باقي كريمة الزبدة بالقهوة لتزينها وتقدم
