يعتبر طبق (بولفاف) من الأكلات الشعبية المغربية الشهيرة التي يفضل اعدادها وتناولها بمناسبة عيد الأضحى المبارك.
ويتكون طبق (بولفاف) من قطع صغيرة من كبد الخروف ورئته يتم لفها بقطع صغيرة من الشحم ثم توضع في قضبان خشبية أو حديدية صغيرة في خمس حبات أو ست قبل أن يتم شواؤها على الفحم الذي يسمى لدى المغاربة ب "الفاخر".
وتسهر النساء غالبا على اعداد هذه الوجبة الشعبية التي تقام خصيصا بمناسبة العيد واللاتي يبرعن في اعدادها بطريقة تقليدية سواء في المدن أو القرى والأرياف وبطقوس عائلية تحمل الكثير من الحميمية والتلقائية.
وهناك العديد من الأسر المغربية من يفضل طهي قضبان (بولفاف) في الزيت وهو ما يجعل مذاقها لذيذا يستهوي الكبار والصغار بعد أن يتم تناول قطع اللحم ممزوجة ب "الكمون والملح".
ومن عادات الأسر المغربية خلال تبادل الزيارات بينها تبادل أطباق (بولفاف) بينها تعبيرا عن اقتسام لذة لحوم خرافهم حيث تعبر جودة (بولفاف) عن جودة أضاحي الجيران والأصدقاء والعائلات وسمنتها.

تزال القشرة عن الكبد, يضاف الملح, الكامون, توضع في مشواة لتنضج مع الرئة

يجفف الشحم جيدا ,تقطع على شكل شرائح طويلة, يقطع الكبد والرئة مربعات متوسطة

تلف بالشحم ونضعها باسياخ الحديد وتشوى على النار.

* * كيلو هبرة لحم الخروف مقطعة الى مكعبات صغيرة
* ملعقة صغيرة فلفل أحمر حلو
* ملعقة صغيرة فلفل حار أسود
* ملعقة صغيرة كامون
* نصف ملعقة صغيرة ملح
* نصف ملعقة صغيرة قزبر يابس مدقوق
* ملعقة كبيرة بقدونس مفروم
* بصلة مفرومة
* ملعقة كبيرة زيت الزيتون



طريقة التحضير



* في زلافة كبيرة، ضعي مكعبات اللحم، ثم أضيفي إليها، الملح، الابزار، الفلفل الأحمر الحلو، الكامون، البقدونس المفروم، البصلة المفرومة، القزبر اليابس المدقوق، زيت الزيتون.
* خلطي الكل جيدا باليد حتى يتشرب اللحم التوابل جيدا.
* اتركي الكل يرتاح نصف ساعة قبل الشواء.
* صففي قطع اللحم في قضبان حديدية، تقريبا ستة قطع في القضيب الواحد.
* في كانون ("مجمر" وهو عبارة عن إناء من الفخار يوضع به الفحم) مملوء بالفحم المشتعل، ضعي المشواة وصففي فوقها قضبان اللحم.
* قلبي اللحم من جميع الجوانب حتى يتحمر جيدا.
* عندما يتحمر الشواء ارفعيه من فوق المجمر وقدميها ساخنا بألف صحة وعافية.

المقادير



- نأخذ 1 إلى 2 كلغ لحم غنم مقطع قطع حسب الرغبة " اللحم من جهة الفخذ أو الكتف بحيث نتفادى الشحم و الدهون"
- 6 فصوص ثوم محكوكة أو مدقوق مع الملح - ملعقة شاي من القرفة بودرة - ملعقة شاي من الزنجبيل بودرة - ملعقة شاي من الفلفل الأسود بودرة أو الأبيض -كأس زيت نباتي- ملعقة صغيرة من السمن المغربي (طريقة تحضيره موجودة في القسم ) أو الزبدة مملحة- زعفران شعرة - نصف كيلو غرام بصل - اللوز مقلي - الزبيب
طريقة التحضير :

في إناء نضع الثوم محكوكة + قرفة + الزنجبيل + الفلفل الأبيض + زيت + السمن المغربي + زعفران الحر و نخلط الكل و هكذا محصل على شرمولة (كلمة من اللهجة المغربية).
ثم نأخذ قطع اللحم و تشرمل أو تطلى بالمزيج السابق التحضير.
ثم في الطاجين+ قليل الزيت + البصل المفروم حتى تتقلى قليلا و يصبح لونها أبيض ، ثم نضيف الللحم المشرمل و الشرمولة المتبقية + قليل من الماء في إناء الشرمولة حتى لا تضيع.
نترك الكل على النار مع تقليبه من الحين إلى الأخر حتى تتقلى قطع اللحم + نزيد الماء حسب الحاجة ، لا يجب أن نكثر من الماء، و نتركه يطهى على نار متوسطة.

عندما ينضج اللحم نضيف الزبيب المنقوع مسبقا في الماء

ثم نجهز البرقوق ونقلي اللوز

طريقة تحضير البرقوق معسل:

يسلق في الماء قليل من الوقت ..ثم يصفى ونضعه في طنجرة صغيرة ونضيف اليه قليل من المرق ثم نضيف قليل من العسل ونتركه على نار هادية لكي يتعسل

(ويمكن اضافة السكر المطحون اذا لم يكن العسل )



مدة طهي الطاجين ساعه الى ساعة ونصف

فلفل حار مقطع دوائر

نضيف فلفل احمر حلو

ملح

كمون

فلفل اسود

ثم نضيف خليط الكبده واللحم

ونقلبهم باستمرار حتى ينضج
