البقلاوة... بنسيج طبقات العجين الرقيق و المحشوة بالمكسرات الغنية و المحلاة بقطر العسل . قد ترين أن نجاح صنعها محدود على محل الحلواني.
سنعرض هنا تذوقا جديدا للبقلاوة و كيفية التعامل مع عجينتها الرقيقة , بالإضافة إلى سر البقلاوة الكاملة و لتوفير وقت صنعها بينما تشكلين طبقات العجينة و تقطعينها إلى أشكال ماسات تقليدية.
عندما تكتشفين سر البقلاوة ستجدينها أسهل بكثير مما قد تعتقدين .
الحشوة سهلة كفاية و بقليل من الأفكار سيكون من السهل جدا بناء الثقة التامة في كيفية التعامل مع عجينة الفيلو - رقائق البقلاوة (phyllo dough )

** بقلاوة الشوكولاتة اللوزية **

إن الذي يجعل هذه البقلاوة رائعة و غير تقليدية هو امتزاج اللوز المحمص بقطع الشوكولاتة الصغيرة قليلة الحلاوة و المغطاة بطبقات الفيلو و المحلاة بقطر اللوز .
استخدمي شوكولاتة من النوع الجيد لنكهة ألذ و أشهى .
افرمي المكسرات فرما ناعما (لكن ليست بودرة) مما سيجعلها متماسكة مع بعضها مع الحفاظ على بنيتها.

1/2 ك ماء
1/4 ك عسل
3/4 م.ص خلاصة اللوز

>> مقادير الحشوة <<
-----------------------------
1 و 1/2 ك لوز كامل محمص**
1/4 ك سكر
3 أونصة شوكولاتة قليلة الحلاوة مقطعة ناعمة جدا


>> مقادير العجينة <<

1 ك زبدة غير مملحة مقطعة
1/2 م.ص خلاصة اللوز
24 صفيحة عجينة فيلو (أو رقائق البقلاوة) مفرزة و مذاب عنها الثلج

## الطريقـــــــــــة ##

1- امزجي كل مقادير القطر في مقلاة متوسطة , ضعيهم على نار فوق الوسط حتى الغليان . خففي الحرارة إلى الوسط أو أقل بقليل و اتركيها تغلي 5 دقائق أو حتى يثخن قليلا . برديه (سيثخن القطر بينما يبرد)
2- ضعي 1/2 كمية اللوز في مطحنة الطعام (فود بروسيسر) , اطحنيه حتى يصبح مفروما ناعما . أعيدي مع بقية كمية اللوز .
في زبدية وسط اخلطي معا كل مقادير الحشوة.
3- أذيبي الزبدة في المايكرويف في كوب مخصص للقياس آمن للوضع في المايكرويف على أعلى درجة 40-60 ثانية أو حتى الإذابة , أزيلي الطبقة العلوية و الرغوة المتشكلة و صبي الزبدة الصافية في كوب صغير .
اخلطي معها 1/2 م.ص من خلاصة اللوز.
4- حمي الفرن إلى درجة حرارة 350 درجة فهرنهايت .
ادهني صينية فرن (13×9 إنش) بالزبدة . مدي عجينة الفيلو فوق لوح التقطيع , اقطعي العجينة إلى 13×9 إنش أزيلي الفيلو الزائدة و احفظيها إلى استعمال آخر . غطي الفيلو بمنشفة كبيرة جافة . ضعي صفيحة واحدة من الفيلو في أسفل الصينية ادهنيها بالفرشاة بخليط الزبدة كرري مع 12 صفيحة فيلو مع دهن كل واحدة بخليط الزبدة .
5- الآن افردي حشوة البقلاوة بالتساوي فوق العجينة ثم كرري طبقات العجينة مع 12 صفيحة أخرى و مع دهن كل واحدة بخليط الزبدة
6- اقطعي البقلاوة عرضيا إلى شرائط 1 و 1/2 إنش (اقطعي جيدا حتى الوصول لأسفل الصينية) . ثم اقطعي معينات لتشكيل ماسات بقلاوة , أو اقطعيها مربعات .
اخبزيها 25 - 30 دقيقة أو حتى تنتفخ قليلا و تأخذ اللون البني المذهب الفاتح . ضعيها على منصب معدني . و حالا صبي القطر المبرد فوق البقلاوة , برديها تماما .

** لتحميص اللوز : ضعيه على صفيحة فرن و اخبزيه على الدرجة 375 فهرنهايت لمدة 5 - 8 دقائق أو حتى يصبح بنيا مذهبا

عدد الحريرات : 105 حريرة, الدهون الكلية : 6.5 غرام (3 غرام دهون مشبعة) , البروتين : 1.5 غرام , الكربوهيدرات : 11.5 غرام , الكوليسترول : 10 ميلي غرام , الصوديوم : 15 ميلي غرام , الألياف : 1 غرام
