أكلات مغربية بالصورلحم الخروف اتفاية باللوز

أكلة لحم الخروف باللوز، والأكلة مذاقها حلو ولذيذة جدا، وهي من الأكل التي يمكن أن تعديها خلال عيد الأضحى المبارك، مقاديرها جد سهلة وكذلك طريقة تحضيرها في متناول الجميع،

* كليو غرام ونصف لحم الخروف مقطع إلى قطع متوسطة الحجم
* 250 غرام من اللوز المسلوق والمقلي والمقطر والمنشف جيدا
* نصف ملعقة صغيرة من الزعفران الحر مدقوق ونصف ملعقة صغيرة زعفران العادي
* ملعقة صغيرة من الملح
* نصف ملعقة صغيرة من الفلفل الحار الأبيض
* نصف ملعقة صغيرة من الزنجبيل
* نصف كيلو غرام بصل
* ملعقة كبيرة بقدونس وقزبر مدقوق جيدا
* كأس شاي من زيت المائدة
* وملعقة كبيرة من السمن البلدي
* أربع فصوص من الثوم المدقوق
* ملعقتان كبيرتان سكر سميد أو ملعقتان كبيرتان عسل أصلي

* في طنجرة خاصة بالطهو، نضع البصل المفروم ونضيف الزيت والسمن والثوم المدقوق والقزبر والبقدونس المدقوق، والفلفل الحار الابيض، والزنجبيل، والملح والزعرفان الحر والزعفران العادي ونخلط جيدا ثم نضيف قطع لحم الخروف ونخلطها جيدا مع العناصر حتى تنسجم جيدا، ثم نضع الطنجرة فوق نار معتدلة، وعندما تقلى العناصر جيدا، نغمر اللحم بالماء، ثم نغلق الطنجرة وننتظر حتى ينظج اللحم جيدا.
* نأخذ اللوز ونسلقه ثم تنزع قشوره ويقلى في زيت ساخنة وغزيرة، ثم يقطر وينشف ويترك جانبا.
* عندما يطهى اللحم ويتقلى وتقل مرقه، نضيف ملعقتين كبيرتين من السكر السميد أو من العسل، حسب الذوق، ونترك الخليط يقلى جيدا، حتى تصبح المرق قليلة في الطنجرة ومخثرة.
* في إناء التقديم نضع قطع اللحم وتزين باللوز المقلي، ويمكن أن نضيف البيض المسلوق للتزيين.

طاجن الدجاج المحمر

المقادير ل 4 الى 6 اشخاص:

دجاجتان من وزن كيلو ونصف
4 بصلات متوسطة مبشورة ناعم
4 فصوص ثوم مهروسة
رشة الزعفران مذابة في ربع كاس ماء دافئ
3 ملاعق كبار زبدة + نصف كاس صغير زيت نباتي
3 ملاعق من الزبدة المملحة او السمن البلدي
ملح - فلفل ابيض و أسود- قبصة صغيرة من الزنجبيل البودرة
بيض بعدد الاشخاص و لوز للتزيين

قبل إستعمال الدجاج نقوم بنقعه بعض الوقت مع قليل من الملح و قطع الليمون الحامض و نفركه بالحامض جيدا ثم نغسله بالماء جيدا.

في طنجرة نضع الدجاج مع:
البصل و الثوم و الملح و الزعفران و البهارات + السمن و الزيت و نتركها حوالي 10 دقائق ثم نضيف الزعفران و ماؤه و كذلك لتر من الماء و نتركها تطبخ على نار متوسطة مدة ساعة او حتي تتاكدي من إستواء الدجاج.

نسحب الدجاج و نضعه في صينية الفرن و ندهنه بالزبدة و ندخله الفرن ليتحمر.
في ذلك الوقت نترك المرق المتبقي في الطنجرة ليتختر.
عند التقديم نصب المرق فوق الدجاج و نزينه باللوز المقلي و انصاف البيض المسلوق

المقادير :

· 2 ملعقة طعام زيت زيتون .
· بصلة مقطعة الى شرائح رفيعة .
· 2 فص ثوم مهروس .
· 2 ملعقة شاي كمون ناعم .
· 2 ملعقة شاي زنجبيل ناعم .
· 2 ملعقة شاي بابريكا .
· 1 ملعقة شاي كركم ناعم .
· 1 ملعقة شاي قرفة ناعمة .
· 500 جرام فيليه لحم مقطع الى مكعبات .
· 1 1/2 كوب مرقة لحم .
· 1 ملعقة طعام قشرة ليمون مبشورة .
· 2 ملعقة طعام زيتون أسود شرائح .
· 1 ملعقة طعام شبت مفروم .
· عجينة فطائر جاهزة ( مثلجة ) .
· بيضة مخفوقة .

(1) سخني الزيت في مقلاة كبيرة على نار متوسطة وأضيفي لها البصل والثوم والبهارات .
(2) أضيفي اللحم ثم مرقة اللحم ، غطي المقلاة واتركيه على نار خفيفة لمدة 30 دقيقة .
(3) أضيفي قشر الليمون ثم ارفعي الغطاء عن القدر واتركيه لمدة 20 دقيقة أو حتى يجف الخليط وينضج اللحم .
(4) أضيفي الزيتون والشبت واتركي الخليط ليبرد .
(5) خذي صحن قوالب المافن وامسحيها بالزيت .
(6) رققي العجينة واقطعيها الى 24 دائرة باستخدام قطاعات البسكويت بحجم 7 سم و24 دائرة أخرى بحجم 5.5 سم .
(7) ضعي الدوائر الكبيرة في قوالب المافن بحيث تصبح كالقوالب ثم ضعي بها حشوة اللحم .
(8) ضعي الدوائر الأصغر فوق حشوة اللحم لاغلاق الفطائر ، امسحي وجه الفطائر بالبيض المخفوق .
(9) أدخلي الصينية الفرن حتى تصبح الفطائر ذهبية اللون ، وقدميها مع الزبادي
