طريقة عمل كرواسون بالصور

المقادير:

4 كوب دقيق أبيض فاخر
6 ملاعق طعام حليب بودرة ( لا يستبدل بالسائل )
2 ملعقة طعام بيكنج بودر
نصف كوب سكر ( أوأقل حسب الذوق )
نصف ملعقة شاي ملح
ملعقة طعام خميرة
ربع كوب زيت

كوب ماء دافئ تقريباً حسب العجن " لأن كل دقيق يختلف عن الأخر
لوحالزبدة(في هذا الإثناء نجهز لوح نجمعهم مع بعض متوازين ونضغط عليهم بالمفردةليصبحوا لوح واحد ونضعها في ورق مشمع ونضعها في الثلاجة لتبرد من جديد)

التغطية :
ملعقة كبيرة حليب (لبن) بودرة
ملعقة من الماء
ربع ملعقة سكر
الطريقة:
- انخلي الدقيق و أضيفي كل المقادير الجافة عليه ثم اعملي حفرة بوسط الدقيق .
- ضعي الزيت في الحفرة و افركي بالأصابع , حاولي رفع يديك أثناء العجن إلى الأعلى ليدخل الهواء للعجين .
- اعملي حفرة ثانية و ضعي فيها الماء الدافئ بشكل تدريجي واعجني بعد كل إضافة حتى تتكون لديكِ عجينة لينة و متماسكة .
- اتركي العجينة تتخمر و ترتفع لمدة ساعة تقريباً فى مكان دافئ .

طريقة الفرد : -
بعد أن تختمر العجينة افرديها كدائرة كبيرة

و ضعي فى نصف الزبدة الجامدة , وزعيها على النصف بالتساوي و انتبهي فالزبدة لايجب أنتكون جامدة تماماً من الفريزر حتى لا يتمزق العجين , بل يجب أن تكون طرية ولكن باردة ,و وزعيها على نصف الدائرة

- اطوي النصف الأخر من العجين ليتشكل لديكِ نصف دائرة و حاولي أن تضغطى على هذاالنصف المطوي حتى تصلى إلى الأطراف وتخرجي كل الهواء من العجين و افرديها جيداً , ولو خرجت منك الزبدة أثناء عملية إخراج الهواء فلا مشكلة

- اتركي العجينة قليلاً فى الطبق و غطيها ثم أعيدي فردها , ثم اطويها و افرديها

و كري العملية لمدة ثلاثة مرات فقط و لا تنتظرى بين كل مرة , كأنك تقلبي الزبدةفى العجين بطريقة الطي والفرد هذه .
- بعد انتهاء عملية الطي و الفرد , اتركي العجينة لترتاح مدة ربع ساعة تقريباً .
- اقطعي العجين بالسكين لأربع أرباع , ستلاحظين أن العجين أصبح طبقات أمامك بدون أى مجهود كبير على الإطلاق .
- خذي ربع و افرديه مرة ثانية كدائرة كبيرة و قومي بتقسيمها على شكل مثلثات باستخدام السكين أو قطاعه العجين

نأخذ واحد من المثلثات ونلف ابتداء من القاعدة لنصل إلى الطرف ويكون اللف برفق دون ضعط شديد ..

- امزجي مقادير التغطية و ادهني بهاالكرواسون بعد رصه بالصينية المدهونة بالزيت ستكون النتيجة أفضل من استخدام البيض .
ونتركها حتى تنتفخ

ثم نقسمها إلىمستطيلات متساوية
ثم نضع قطع الشوكولا في الجانب و نثني الطرف عليها

ونضعها في صينية الفرن و ندهنها بأصفر البيض(الوجه فقط)
ونتركها حتى تنتفخ
ثم ندخلها إلى الفرن لمدة30 دقيقة
