المقادير:

دجاجة وزن 2 كيلو مقطعة إلى أربع أجزاء </SPAN>
بصلة كبيرة مقطعة شرائح </SPAN>
2 حبة طماطم مقطعة دوائر </SPAN>
فصين من الثوم غير مقطعة </SPAN>
بطاطا
نصف كوب زيت المائدة
نصف كوب زيت الزيتون </SPAN>

- التوابل: </SPAN>
ملح </SPAN>
بهارات </SPAN>
زنجبيل </SPAN>
زعفران </SPAN>
2 كوب ماء </SPAN>


الطريقة: </SPAN>

- استخدمي الطاجين المغربي إذا توفر , و إذا لم يتوفر استخدمي أي أنية يمكن الأكل منها مباشرة . </SPAN>
- ضعي قطع الدجاج في الطاجين , اضيفي البصل و الثوم و نوعي الزيت-المائدة و البلدي- و البهارات و الماء .والبطاطا </SPAN>
- ضعي الطاجين على النار لمدة ربع ساعة ثم اضيفي الطماطم المقطعة , عدلي البهارات حسب الذوق و اضيفي القليل من الماء عند الحاجة حتى ينضج الدجاج . </SPAN>
- لا يجب أن يكون في الطاجين الكثير من المرق عند التقديم . - . </SPAN>

السلام عليكم
المقادير ل 4 الى 6اشخاص:

دجاجتان من وزن كيلو ونصف </SPAN>
4 بصلات متوسطة مبشورة ناعم
4 فصوصثوم مهروسة
رشة الزعفران مذابة في ربع كاس ماء دافئ
3 ملاعق كبار زبدة + نصفكاس صغير زيت نباتي
3 ملاعق من الزبدة المملحة او السمن البلدي
ملح - فلفلابيض و أسود- قبصة صغيرة من الزنجبيل البودرة
بيض بعدد الاشخاص و لوزللتزيين


الطريقة

قبل إستعمال الدجاج نقوم بنقعه بعض الوقت معقليل من الملح و قطع الليمون الحامض و نفركه بالحامض جيدا ثم نغسله بالماءجيدا.

في طنجرة نضع الدجاج مع:
البصل و الثوم و الملح و الزعفران والبهارات + السمن و الزيت و نتركها حوالي 10 دقائق ثم نضيف الزعفران و ماؤه و كذلكلتر من الماء و نتركها تطبخ على نار متوسطة مدة ساعة او حتي تتاكدي من إستواءالدجاج.

نسحب الدجاج و نضعه في صينية الفرن و ندهنه بالزبدة و ندخله الفرنليتحمر.
في ذلك الوقت نترك المرق المتبقي في الطنجرة ليتختر.
عند التقديم نصب المرق فوق الدجاج ونزينه باللوز مقلي وانصاف البيض مسلوق</SPAN></SPAN>
