البوراك الجزائرى بحشواته المختلفة [الأرشيف]

السلام عليكم,

يعتبر البوراك من اكثر المشهيات شهرة فى الجزائر و يقدم عادة كطبق اول او طبق رئيسى مع سلطة جانبية اذا احتوى على حشوة غنية .

ساضع لكم هنا بعض بعض الحشوات الخاصة بالبوراك و ارجو ان تنال اعجابكم:

المقادير: 1-بوراك التونة و هو لذيذ جدا, انصحكم ان تجربوه:

المقادير:
1 حبة طماطم كبيرة مقطعة الى قطع صغيرة
1بصلة كبيرة مفرومة فرما ناعما.
1حزمة بقدونس مفرومة

علبة تونة مصفية
نصف كوب من الزيتون المقطع
بيضتان مسلوقتان و مقطتان الة مربعات صغير

بيضتان
الطريقة:
يوضع البصل و البقدونس فى مقلاة و يشوح على النار بدون زيت حتى يذبل الخليط. يطفى النار ثم يضاف باقى المقادير + الملح و الفلفل الاسود. ( حذار من الاكثار من الملح مع وجود الجبنة و الزيتون) تكسر البيضتان على الحشوة و يخلط الكل جيدا.
نضع ملعقة اكل على حافة الورقة و نمدها على شكل مستطيل نغلق الجوانب حتى نتحصل على سيغار, يسخن الزيت ثم ننقص من النار و نقلى البوراك حتى يتحصل على لون ذهبى , يصفى من الزيت و يقدم ساخنا مع حلقات الليمون.
1 حبة طماطم كبيرة مقطعة الى قطع صغيرة 1بصلة كبيرة مفرومة فرما ناعما. 100غ جبنة مبشورة 1حزمة بقدونس مفرومة

و هنا عملته على شكل مثلث على الطريقة التونسية, و لكن هذه الطريقة تشرب زيت اكثر فيجب وضعها فى مصفاة اولا .و هذه طريقة اللف:

هذه طريقة اقتصادية جدا و سهلة جدا و كذلك لذيذة جدا: 2 بوراك البطاطا:

اولا نسلق 3الى 4 حباة بطاطا حجم متوسط, ثم نقوم بهرسها و اضافة رشة ملح, فلفل و جبنة سائلة اليها:

نفرم بصلة , و نضيف اليها نصف حزمة بقدونس مفرومة و حبة طماطم مقطعة مربعات و قليل من الزيتون المقطع, + رشو ملح و فلفل و ممكن اضافة التونة ادا اردنا.

ناخد ورق البوراك و نضع قليل من الهريسة( الشطة) على حافة الورقة, نضيفملعقة من البطاطا و ملعقة من الخليط , و نرش عليها جبنة و نغلقها ثم نقليها مع مراعاة طوى النار حتى لا تحترق.

و يمكن ان نضع الحشوة فى الوسط ثم نكسر عليها بيضة و نغلق الورقة الى مربع و نقليها.
انا هنا وضعت ورقتين من السبرينغ رول حتى يكون بامكانى طيها بسهولة.
يجب ان ننقس من النار على الاخر حتى تنضج البيضة و ممكن ايضا خفق البيضة جانبا ثم اضافتها الى الحشوة و هذا افضل للمبتدئات. و هذه صورة البوراك بالبيض. يمكن عملها فى الليل كعشاء خفيف مع سلطة جانبية

-3بوراك اللحمة المفرومة:

نشوح بصلة مفرومة مع قليل من الزيت ثم نضع اللحمة المفرومة+ ملح , فلفل , قرفة , بهارات , مع التقليب المستمر حتى تمام النضج.ثم نضيف بقدونس مفروم , زيتون مقطع, جبنة مبشورة او سائلة و بيضة. تخلط الحشوة جيدا ثم نحشى بها ورق البوراك. و هذه هى الصورة النهائية:

بوراك الدجاج:
نضع قطع الدجاج فى طنجرة مع ملعقة اكل سمن و بصلة مفرومة و 3 حبات ثوم مفرومين و نقلى الدجاج فوق نار هادئة مع الاستمرار فى التقليب, نضيف الملح, الفلفل, الكركم, البهارات, ونستمر فى التقليب ثم نغمر الدجاج بالماء الساخن, و نتركه يستوى على نار متوسطة ,حتى تمام النضج, بحيث يبقى القليل من المرق فى الطنجرة.ننتف الدجاج و نرجعه الى الطنجرة ثم نضيف,بيضة مخفوقة , زيتون اخضر او اسود مقطع و طبعا الجبنة.
نحشى ورق البوراك و نقليها ,
انا هنا استعملت ورق الغلاش و كانت لذيذة جدا.
