اولا نبدأ بطريقة تحضير العجينة المورقة
المقادير
[]500غ من الدقيق
500غ من الزبدة
قليل من الملح
ملعقتان كبيرتان من السكر
ملعقة كبيرة من الخل
أصفر بيضة
4/1 كاس صغير من الزيت
2/1 كاس صغير من الماء او أكثر

الطريقة
في ايناء للعجن يوضع الدقيق ويجوف وسطه , يضاف اليه الملح والسكر ومقدار60غ من الزبدة والخل و قليل من الماء
يجمع الخليط ويصير متماسكا بالعجن جيدا
تغلف بورق النايلون وتبرد لمدة 15 دقيقة وكذلك لترتاح قبل وضع الخطوات النهائية

بعدها توضع العجين فوق مائدة مرشوشة بالدقيق , ثم تطلق بالوراق

ثم توضع فوقها ماتبقى من الزبدة وتجمع الجوانب الى الوسط على شكل ظرف . نغطيها ثم ندخلها مرة أخرى الى الثلاجة مدة 15 دقيقة

تخرج من الثلاجة وتبسط بالوراق

ثم تطوى على ثلاتة في نفس الاتجاه

تطلق العجين مرة أخى

تكرر العملية ثلاث مرات ثم تغطى
تبسط العجين المورقة فوق مائدة مرشوشة بالدقيق وتقطع الاطراف لنحصل على قطعة متساوية الاضلاع لنحصل على ثلات قطع

تثقب المستطيلات بالشوكة لكي لاتنتفخ في الفرن ثم ترش بالسكر

الفندون او الشكلاطة البيضاء
200غ من الشكولاطة السوداء للتزين

طريقة تحضير الكريم باتسيير

160غ من السكر حسب الذوق
3أكياس الفانيلا أو عود الفاني
2/1 من الحليب
رأس ملعقة صغيرة من الملح
5 أصفر بيضات
ملعقة كبيرة من الزبدة
3 ملاعق كبيرة من الدقيق

الطريقة

يغلى الحليب مع الفانيلا اعواد او أكياس الفانيلا والملح فوق النار ( اعواد الفانيلا تزال من بعد)


في الجانب يطرب اصفر البيض والسكر

نضيف اليهم الدقيق شيئا فشيئا

ثم نضيف المزيج الى الحليب ويخلط الكل جيدا مع مواصلة التحريك بملعقة خشبية حتى الحصول على خليط ثقيل



يرفع القدرمن النار وتضاف اليه الزبدة الدائبة قليلا على شكل مرهم تم يوضع جانبا حتى تبرد

ملعقة صغيرة من عصير الحامض او الخل

في وعاء نضع السكر مع الخل او الحامض وابيض البيض الخلاط الكهربائي

حتى يبيض الخليط ويصير جاهزا

ثم نضع طبقة المستطيل الثانية فوقها

نكرر نفس العملية للمستطيل الثالت
