هل من وجبة أفضل من رقاقات الذرة في الصباح الباكر للانطلاق بحيوية في نهارك؟
‏حسنا، هناك الكثير.
فرقاقات الذرة تحتوي على الملح أكثر من مياه البحر
ولذلك لا تشكل فطورا مثاليا في الصباح الباكر.


في الواقع، نحن بحاجة إلى مقدار قليل من الملح للحفاظ على صحة سليمة،
أما الكميات الكبيرة
منه فتشكل خطراً كبيراً على الصحة، إذ تحفز مشاكل القلب، وأمراض الكلية،
والسكتات الدماغية وحتى سرطان المعدة.

لا تظن أن الخبز غير صحي، لأن أربع شرائح من الخبز تحتوي
على ثلث الكمية الموصى بها يوميا من الملح.
لكن حين نلتهم الوجبات الجاهزة المحضرة صناعيا،
ندخل إلى أجسامنا مقادير هائلة من الملح
ونحفر بالتالي قبورنا بأنفسنا.
أشارت أحدث التقارير إلى أن الملايين يتناولون أكثرمن الكمية
الموصى بها يوميا من
الملح (وهي 6‏غرامات يوميا)، علما أن بعضهم يحصل على
أكثرمن 18 غراما .
ويعتقد إن مئات آلاف الوفيات تحصل سنوياً نتيجة الاستعمال الطويل الأمد للملح

تجدر الإشارة إلى أن 80 ‏في المئة من الملح في غذائنا
يأتي من الأطعمة المعالجة.
لهذا السبب، ترفض كبرى شركات الطعام الاعتراف بضرورة
إدخال التعديلات إلى أنماط أكلنا
وتسعى جاهدة إلى حماية موقعها . فالملح هو سلاحها الرئيسي
لأنه يخفي النكهات البشعة للأطعمة المعالجة. وتزداد المشكلة خطورة
حين ندرك أن الأطعمة المصنعة تحذف البوتاسيوم الأساسي للوقاية
من التأثيرات السلبية لمستويات الملح المرتفعة.
يبدو أننا عالقون فى حلقة مفرغة. فكلما تتاولنا الملح، أصبحنا أكثر إدمانا عليه.
والطريقة الوحيدة لكسر هذه الحلقة هي إحداث تغييرات ثورية فى عادات أكلنا.

نحن تنناول ملحاً اكثر مما نحتاج.

فعظمنا يتناول أكثرمن الكمية الموصى بها يوميا من الملح،
فقد تبين أن الرجال يتناولون 11 غراماً من الملح يوميا،
أي مقدار ملعقتين صغيرتين، فيما تستهلك النساء نحو 8 ‏غرامات .
كما يحصل الأولاد على كمية من الملح تتعدى تلك الموصى بها .
وهذا أمر مؤسف فعلا.
الصوديوم والملح غير متشابها

فعلى الصعيد الكيميائي، الملح هو كلوريد الصوديوم ويحتوي
كل غرام من الملح على 0.4 غرام من الصوديوم.
فإذا كانت لصيقة الطعام تذكر فقط كمية الصوديوم في الطعام،
فما عليك سوى ضرب هذه الكمية بأربعة لمعرفة كمية الملح الموجودة.
وفيما لا نستطيع العيش من دون صوديوم لأنه ينظم توازن ‏السوائل في الجسم
وهو ضروري لعمل الأعصاب والعضلات، تصبح الكميات الكبيرة منه مؤذية.
لكن قسم الكلوريد في الملح لا يعتبر مؤذياً.

‏الملح ليس المصدر الوحيد للصوديوم

‏فالصوديوم موجود أيضا في المواد المضافة، مثل نيتريت الصوديوم
وبيكربونات الصوديوم وغلوتامات أحادي الصوديوم.

‏الملح و ضغط الدم المرتفع.

إن الكثير من الملح قد يسبب ضغط الدم عند الأشخاص المعرضين أصلاً لارتفاع ضغط الدم،
لذلك يوصى عمومأ بتخفيف كمية ‏الملح قدر الإمكان في الطعام

‏يمكن أن يجعلك الملح أثقل وزناً


فاستهلاك الملح يدفعنا إلى احتباس المزيد من السوائل في أجسامنا
لأن الملح يجذب الماء مثل الاسفنجة، وقد يكون ذلك مشكلة حقيقية
بالنسبة إلى النساء في الأيام التي تسبق الدورة الشهرية .
كما يرتبط المأخوذ المرتفع للملح بازدياد إفراز
الكالسيوم في البول، وهذا أمر يعتبره العلماء مهددا لقوة العظام.

الأطعمة المعالجة


في المئة من الملح الذي نتناوله يأتي من الأطعمة المعالجة. لذا، حاول التخفيف قدر الإمكان من هذه الأطعمة واستبدلها بأطعمة طازجة محضرة في المنزل.



الأمور التي يمكنك فعلها لتخفيف مأخوذ الملح قدر الإمكان :


- خفف من تتاول الصلصات، ولاسيما صلصة الصويا، لأنها غنية جدا بالملح.

- خفف من تتاول الوجبات المملحة مثل رقاقات البطاطا المقلية واستبدليها بالفاكهة والخضار والمكسرات غير المملحة.
خفف من تتاول الأطعمة المملحة ‏بكثرة، مثل اللحم المقدد والجبنة



‏والكبيس والسمك المدخن والعديد من الوجبات الجاهزة.

إختر الخضار المعلبة التي تحمل على لصيقتها عبارة من دون ملح.
حضّري المرقة بنفسك أو اختاري مكعبات المرقة القليلة الملح



لأن هذه المكعبات تكون غنية جدا بالملح عادة.

لا تضيفي الملح إلى الطعام. استعملي الأعشاب والتوابل لإضفاء النكهة على ‏الأطعمة.
تخلي عن عادة إضافة الملح إلى الطبق بعد وضعه على المائدة. تذوقي الطعام أولا.
