Nougat aux amandes, trop facile !!! (torrone)

j'ai lu la recette, j'ai acheté des feuilles azyme (ou feuille de riz), des sachets d'amandes émondées et voilà, hier, je me suis bien amusée à faire ce nougat !!! C'est Mr Ottoki qui est ravi, lui qui en raffole ! Il m'a dit : je suis impressionné ! et je lui ai répondu que même lui, il aurait pu en faire autant, tellement c'est fastoche...si, si, c'est vrai !

C'est une recette du livre "Cuisine à l'italienne" de la collection "maraboutchef".

Préparation : 15 min seulement.

Pour 25 tranches


Préchauffez le four à 180°C. Etalez 480 g d'amandes émondées (sans leur peau) sur une plaque pâtisserie, dans votre four...et cuire 10 min. Sortir la plaque et laisser refroidir les amandes dans un moule supportant la chaleur.

Chemisez un un moule rectangulaire (j'ai utilisé un moule à cake Tefal) d'une feuille de cuisson et d'une feuille azyme* (elle a tendance à craqueler mais pas grave).

Dans une casserole de 14 à 16 cm de diamètre :

- 175 g de miel (miel toutes fleurs ou d'acacia par exemple) +
- 300 g de sucre en poudre +
- 2 CS d'eau.

Faire chauffer à feu doux, en remuant bien, pour que le sucre soit bien dissous. (ne pas faire bouillir).

A l'aide d'un pinceau à pâtisserie trempé dans de l'eau chaude, brossez les parois de la casserole pour dissoudre le sucre qui se cristallise.

Portez ce sirop à ébullition : laissez-le bouillir 10 min sans couvrir ni remuer, jusqu'à ce qu'il atteigne 164°C. Si vous n'avez pas de thermomètre, le sirop doit devenir presque noir, couleur café vous voyez ?

Pendant que votre sirop est en ébullition (ne pas le remuer), vous pouvez battre en neige bien ferme 1 blanc d'oeuf dans le KitchenAid VIT 1 à VIT 8, bien ferme.

Votre sirop a atteint 164°C ou est presque noir > Baissez la vitesse du KitchenAid à VIT 2 (pour éviter les projections) et versez ce sirop doucement sur le blanc en neige, dans le bol du KitchenAid. Vous obtiendrez un genre de meringue à l'italienne dorée.


Votre pâte à nougat est prête.

Versez-la sur les amandes, dans le moule (j'ai utilisé un moule à gratin), et remuez avec une cuillère en bois. Ce n'est pas facile car la pâte à nougat se durcit petit à petit...Votre mélange est prêt.

Versez-le dans le moule à cake, sur la feuille azyme en pressant bien.

Couvrez le tout avec une 2ème feuille azyme découpée à la taille du moule
et pressez légèrement.
-J'ai découpé les feuilles azyme qui dépassaient du nougat,
on ne voit plus que la feuille de cuisson qui borde le moule-

Laissez reposer 2 h jusqu'à ce que le nougat soit froid. Démoulez-le et transférez-le dans un récipient hermétique.

Je l'ai coupé en tranches d'environ 1 cm d'épaisseur, à l'aide de la trancheuse électrique avant de le cacher dans ma boîte métallique, jusqu'à ouverture par Mr Ottoki.


Votre nougat se conservera deux semaines dans une boîte hermétique. Je pense qu'ici, il sera mangé avant...hi hi hi !!!


Perso, je le mets au réfrigérateur, pour qu'il soit bien dur...car c'est comme ça que nous le préférons, chez Ottoki. Si vous le voulez plus tendre, le laisser à température ambiante mais toujours dans une boîte hermétique.
