الحليب يقلل من فوائد الشاي

اكتشف علماء في مركز بحوث الشاي في جورهات بالهند أن الشاي يحتوي على نسب عالية من المركبات التي تساعد على تقليل كمية الدهون التي تمتصها الأمعاء ويمكن أن يخفض الكوليسترول. لكن البروتينات الموجودة في حليب البقر المخلوط بالشاي تحيد هذه القدرة على مكافحة الدهون.
وقد بينت الدراسة الجديدة التي نشرتها ديلي تلغراف أن المركبين المعروفين باسم ثيوفلافين وثيواروبيغنيز يمنعان البدانة في فئران التجارب التي كانت موضوعة على نظام غذائي عالي الدهون.
ويعتقد الباحثون الآن أن هذا الأمر يمكن أن يفسر لماذا لا يبدو على الناس في بريطانيا عدم استفادتهم من التأثيرات الصحية للشاي رغم كونهم من بين أكبر المستهلكين لهذا المشروب في العالم.
وقال الدكتور ديفاجيت بورثاكور، وهو عالم بالمركز المذكور، إنه عند تناول الشاي بالحليب يشكل المركبان المذكوران مجموعات مع بروتين الحليب وهو ما يسبب ترسبها. وهذا معناه أننا لا نحصل على الفائدة الصحية المرجوة من هذه المركبات أو من بروتين الحليب. ولهذا يُنصح دائما بتناول الشاي بدون حليب.
وأشارت الصحيفة إلى أن الباحثين في المركز يعملون الآن على تطوير سلالات جديدة من الشاي بها نسب أعلى من هذه المركبات المعروفة باسم بوليفينول بينما يبحثون عن طرق لجعلها أقل عرضة للتحييد بواسطة الحليب.
وقد أظهر البحث أن الجرعات المنخفضة من عصارة الشاي العادي قللت مستويات الكوليسترول في الفئران كما قللت مستويات الأحماض الدهنية في مجرى الدم.
ويذكر أنه قد وُجد أن عملية التخمير المستخدمة في صناعة أوراق الشاي الأسود، المشروب الأكثر شيوعا في بريطانيا، ترفع مستويات هذه المركبات المكافحة للدهون مقارنة بالشاي الأخضر غير المخمر.
ويشير البحث إلى أنه رغم الاهتمام الأكبر الموجه للفوائد الصحية للشاي الأخضر فإن الشاي الأسود قد يكون له خواص صحية أكثر لكن شربه بالحليب يغطيها.
كذلك وجد باحثون بريطانيون أن نوع الحليب المستخدم في فنجان الشاي يمكن أن يؤثر على مستوى المركبات الصحية.
