كوب من الحليب الطازج، لذة ينتظرها كثيرون ممن يحبون الحليب الطبيعي. غير أن هذه المتعة الطبيعية تنطوي على مخاطر صحية جسيمة! فحليب البقرة، يكون عادةً خالياً من الجراثيم، لكن قد تطاله الجراثيم الموجودة في المحيط أثناء عمليّة الحلب، بحسب أستاذ الطب البيطري الألماني فولف روديغر شتينسيل.


يمكن أن يكون حليب البقرة عرضةً لبعض فضلات برازها، ويمكن بالتالي أن يتلوّث الحليب ببكتيريا من سلالة «الإشريكية القولونية» أو بكتيريا «كامبيلوباكتر». ويسهم التنظيف الجيد لأدوات الحلب ونظافة الحظيرة في تقليل خطر التلوث، إلا أنّ التعقيم يبقى ضرورياً.


وحده غلي الحليب يؤدي إلى قتل البكتيريا، لكن قد تبقى البكتيريا على قيد الحياة في الحليب غير المعالج حرارياً ويتم تناوله كحليب خام، مما يسبب حالات إسهال عند البالغين.


لكنّ الحليب الخام قد يُشكل خطورة على الأطفال والأشخاص الذين يعانون من ضعف المناعة والحوامل. ويمكن أن تسبب هذه الجراثيم حالات تقيؤ وإسهال مصحوبة بارتفاع في درجة الحرارة ومتاعب في الدورة الدموية، وفي الحالات الخطيرة يمكن أن تتسبب الجراثيم في الإصابة بإسهال مصحوب بنزيف وحتى الفشل الكلوي!

أمّا بالنسبة إلى الجبن المصنوع من حليب الأبقار، فإنّ ارتفاع نسبة الأملاح فيه أثناء عمليّة صنعه، يؤدي إلى القضاء على معظم الكائنات الدقيقة الخطيرة.


لكنّ بكتيريا الليستريا حالة خاصة، لأنها تصيب الجبن المصنوع من حليب البقر، شأنها في ذلك شأن الجبن المصنوع من الحليب المبستر، ويمكن أن تسبب حينئذ ما يُعرف باسم "داء الليستريات" الذي يتخذ في الغالب مساراً شبيهاً لمسار عدوى الأنفلونزا.


وعن خطورة داء الليستريات، يقول خبير الألبان فيليب هامر: "الليستريا يمكن أن تؤدي إلى إصابة الرُضع وكبار السن والأشخاص الذين يعانون من ضعف المناعة بحمى وغثيان وآلام الأطراف، وكذلك الإصابة بأحد أشكال الالتهاب السحائي، وبالنسبة للحوامل فيمكن أن تتسبب الليستريا في حدوث إجهاض أو ولادة الجنين ميتاً!".
