البقلاوة الكلاسيكية عروس الحلويات الجزائرية

درجة حرارة الفرن:180 درجة
المدة:من 45 د الى ساعة
المكيال المستعمل:
pot تاع الفلان الصغير لي ب لتر حليب تملي بيه 08 قيس السنيوة لي في الصورة تتحصلي بيها على 15 حبة بقلاوة ان قطعتيها متوسطة الحجمة وتوصلي الى 18 حبة ان قطعتيها صغيرة .
المقادير:
04 كيلات فرينة
01 كيلة سمن طري
ملعقة صغيرة فاني
قرصة خميرة
ماء زهر
صفار بيضة لسنيوة صغيرة اما كبيرة تزيدى صفار
للحشو
03 كيلات كوكاو +عطر اللوز (دائما نفس المكيال) او لوز
01 كيلة ماشي معمرة سكر حرش(تقدري حتى ديري نصف فقط لميحبش السكر بزاف).
مبشور ليمونzeste de çitron
ماء زهر
للتعسال:
عسل +ماء زهر
طريقة التحضير:
نضع الفرينة نضيف لها السمن طري وندخل مليح باليدين +
الفاني والخميرة ونغربل الكل في غربال نيف صفار البيضة
ونجمع بماء زهر نحصل على عجينة طرية ماهي سايلة
ماهي يابسة نضعها في كيس بلاستيكي ونتركها ترتاح
حوالي 1/2 ساعة.
نحضر الحشو نرحي الكوكاو خشن+عطر اللوز +مبشور
الليمون +ماء زهر منشمخش بزاف شوية فقط لازك
الحشو يجي كي الرمل المشمخ.
نجيب سنيوة ندهنها بالسمن
ندوب السمن +قرصة خميرة باه ندهن الطبقات
يسخن الفرن
نجيب العجينة نحلها فوق سطح مرشوش بالنشاء ونمررها
في الماكنة رقم 04 ثم 08 ونغطي سنيوة كامل حتى الاطراف

وندهن بالسمن نعيد العملية 06 طبقات نفرش الحشو
ونعادو نفس العملية نغطي ب 06 طبقات اخرى وندهن
بالسمن
نعقب الحلال فوق السنيوة باه يسقط الزائد من العجينة
نقطع مقروطات بالسكين حتى اسفل السنيوةونرشق
في كل مقروطة حبة كوكاو كاملة
توضع في الفرن عند احمرار الحواف نشعل من الفوق
ولي عندها فرن يشعل من الفوق والتحت تتركها حتى تحمر .
ندوب العسل فوق النار مع ماء زهر لازم يخف شوية نعسل البقلاوة .
عفسات خاصة بالدرس:
1-تعمليها بالزبدة جي اخف
2-لما ديري الزبدة طرية متخرجش ملدنة بزاف
3-لما تستعملي ماكنة فرد العجينة جيك اسهل واوراقها
جي شفافة
4-لما تحلي العجينة فوق النشاء جي الاوراق مقرمشة
5-لما ديري قرصة خميرة في سمن لي تدهني بيه
الطبقات عند الطهي الطبقات رايحة تتفرق على بعضها
وجي هايلة (فكرة عضوة ربي يذكرها على خير)
6-لما تعسلي البقلاوة اتركيها تبات وغدوة انزعيها من السنيوة

7-حضري البقلاوة بليلة قبل الطهي
8-ارشي مليح حبة اللكوكاو داخل الطبقات واتكدي من
دخولها هي لي تشد الطبقات ومايتفرقوش على الحشو
9-حمصى الكوكاو في الفرن قبل ما ترحيه

10-استعمال القرفة اختيارية
