أخطارالإفراط في تناول اللحوم

الإكثار من اللحوم يقود إلى تصلب الشرايين والجلطات الدموية وتضخم البروستات


تمتاز اللحوم، سواء كانت إبلا أو بقرا أو غنما أو ماعزا، بجانب محتواها من الدهون الحيوانية المشبعة والكولسترول، بفوائد كثيرة، فهي تحوي البروتينات ذات القيمة الحيوية العالية والمهمة لجدران الخلايا وكذلك الخلايا العصبية وخلايا المخ، كما تحتوي اللحوم الأحماض الأمينية الأساسية الضرورية للجسم وتحوي أيضا العناصر المعدنية المهمة لصحة الإنسان، كالحديد والبوتاسيوم والفوسفور والزنك والنحاس، وكذلك على الفيتامينات، كمجموعة فيتامين (b) كالريبوفلامين والثيامين وفيتامين (b6 وb12) والفوليك، حيث تعتبر مصدرا للفيتامينات الذاتية في الدهون (i d، i k). كما يعتبر الكبد مخزناً لفيتامين (i)، وتعتبر اللحوم مصدرا من مصادر الطاقة المهمة لصحة الإنسان، حيث ينتج عن تناول 1 غم بروتين 4 سعرات حرارية.
من جهة أخرى كشف المختصون في التغذية “أن أهم مشاكل الإسراف في تناول اللحوم إصابة الأوعية الدموية بالغلظة، ما يؤدي إلى انفجارها وظهور النزيف في الأنسجة المجاورة، كما أوضحت بعض الدراسات أن الإكثار من تناول اللحوم يؤدي إلى دفع ضغط وزيادة إفراز الغدة الدرقية، بالإضافة إلى أن الإفراط في أكل اللحوم يؤدي إلى الإصابة بأمراض الأوعية الدموية المختلفة، كأمراض تصلب الشرايين وأمراض القلب المختلفة وتكوين جلطات دموية بسبب ارتفاع الدهون الحيوانية والكولسترول الخطر على صحة الإنسان، وكذلك إلى تكوين حصوات بالمرارة وتضخم البروستات وتكوين الأورام العضلية بالرحم والنقرس الذي يحدث بسبب زيادة مستوى حمض البوليك بالدم الناجم عن زيادة البروتينات. ولا ننسى تأثير حمض البوليك في تكوين حصوات في الجهاز البولي وتأثيره على المفاصل والعضلات. كما يؤدي أيضا الإفراط في تناول اللحوم إلى إرهاق وظيفة الكلى وزيادة الآلام الكلوية والمشاكل المترتبة على ذلك. لذا ينصح باعتدال في تناول اللحوم وخاصة اللحوم الحمراء والكبد والكلاوي والمخ واللسان.
وحتى يكون استهلاكنا للحوم آمنا ينصح المختصون بالآتي:
* الاكتفاء بتناول اللحم مرة واحدة على الأكثر يوميا ويستحب أن يكون تناوله ظهرا والابتعاد عن تناوله ليلا، خاصة قرب النوم لأن هضم اللحوم يأخذ وقتا طويلا في الجهاز الهضمي. والأفضل التنويع كأن يأكل في يوم لحما، وفي يوم آخر سمكا، وفي يوم يليه دجاجا أو بيضا وهكذا.
* الإقلال من تناول اللحوم الحمراء المقلية، ويفضل المسلوقة والمشوية.
