المقادير طبعا حسب عدد افراد عائلتك

حمص منقوع ليلة من قبل ، تطيبيه في الكوكوطة مليح و ماتضيفيلو والو
ملح فلفل اسود كمون بصل مقطع رقيق دبشة مقطعة رقيقة طماطم مرحية و شوية مصبرة مع ملعقة سكر هريسة حسب الرغبة فلفل مرقد قطع من الليمون زيت زيتون ضرورية تقدري تضيفي فلفل عكري و توابل حسب رغبتك

بسم الله الرحمان الرحيم السلام عليكم
الدوبارة هي أكلة بسيطة لكن طعمها لذيذ تشتهر بها عاروس الزيبان سكرة ( مدينة بسكرة )وهي المفضلة عند جميع العائلات هناك
الأن سوف أعطيك دوبارة البسكرية
المكونات :
كيلو فول من النوع الجيد ( و هنا يبقى لك الإختيار حمص أو فول )+ ملعقة كربونوات -+ كيس من خميرة الكاطو + فلفل حار + طماطم + هريسة + زيت + ثوم + قارص + كمون + كروية
طريقة التحظير :
نأخذ كمية الفول (كيلو) نضعها في الماء نظيف لها ملعقة الكربونات قومي بهذه العملية مثلا اليوم و غدا قومى بوضع
بماء جديد بعدها أظيفي له كيس الخميرة و نضعه على نار هادئة + فلفل حار يابس ونتركه حتى يطبخ
تحضير صلصة الدوبارة :
قومي بتقطيع الطماطم والفلفل الحر أخضر إلى مكعبات صغيرة +فلفل من النوع الطويل والرقيق +ا الدبشة مقطعة +ملعقة هريسة + طماطم منقاة ومرحية جيدا .
طريقة ةتقديم :
خذي صحن ضعي فيه كمية من الفول الذي قمت بطبخه مع قليل من الماء المطبوخ فيه أضيفي له جميع مكونات صلصة الدوبارة ةالمذكورة +ملعقة كبيرة من الزيت الزيتون قليل من الكمون الأخضر +قطع من القارص للتزين +الدبشة
الشرح:
الفلفل الرقيق الطويل : تجدينه عند بائع الزيتون يباع بالكمية مخلل
و شهية طيبة

الدوبارة البسكرية غنية عن التعريف في الجزائر اكلة شعبية لا تقاوم يأكلها الغني و الفقير على حد سواء

اسرار الوصفة "" الدبشة الكثيرة. زيت الزيتون - لا تحضر بالزيت العادي - و التوابل البسكرية خصوصا راس الحانوت المحلي الذي يختلف من منطقة الى أخرى"

*** المقادير
1. حمص أو فول . أو الاثنين معا يوضعان مسبقا في الماء على الاقل 12 ساعة
2. طماطم مصبرة و هريسة
3. دبشة " كسبر أخضر" نحتاج الى كمية كبيرة ربطتين أو أكثر. و ورقة او اثنين رند.
4. زيت زيتون
5. تواب "يفضل النوع البسكري و الجديد" : راس الحانوت . كسبر حب مطحون. فلفل اسود مطحون. الكمون . فلفل أحمر مطحون حار و عكري. الكركم و الزعفران
6. طماطم و فلفل اخضر حار و حلو
7. ثوم.
8. ملح
*** ملاحضة هناك نوعين من الدوبارة :
- واحدة تحضر في الشتاء
- الثانية تحضر في الصيف أو الحر



المرحلة الاولى


1. طريقة تحضير الحمص او الفول" يحضر كل من الحمص و الفول و الحمص على جانب لا يحضران في قدر واحد.
ناخذ اما الحمص أو الفول ونضعه في قدر و نضيف له الكمية الكافية من الماء لكي ينضج. نضيف القليل من الملح.الكمون . القليل من راس الحانوت. القليل من الفلفل الأسود و ملعقة من زيت الزيتون و فص ثوم مطحون نضيف ملعقتين أو ثلاثة من الصوص للقدر و نترك المحتوى ينضج على نار متوسطة.


المرحلى الثانية

2. طريقة تحضير الصوص

. نضع في قدر الطماطم" منزوعة القشرة المطحونة و الفلفل الأخضر الحار و الحلو المطحون ايضا " حسب الحاجة" و الدبشة المفرومة ربطة. نضيف زيت الزيتون وكل التوابل التي ذكرت وو رقة الرند القليل من كل شيئ و نكثرمن الكسبر المطحون و الفلفل الأحمر و الكمون. الثوم . طماطم مصبر وهريسة ونحرك الكل فوق نار هادئة. ثم نضيف القليل من الماء " ونترك المحتوى ينضج. من20 ال30 دقيقة . كما يمكن اضافة راس فلفل حار الى الصوص دون طحنه.



المرحلة الثالثة


بعد أن ينضج الحمص أو الفول " لا نتركه ماءه بل حتي يتبخر أغلب الماء و نترك القليل" وبعد ان ينضج الصوص نضيفه كله الى قدر الحمص او الفول دون تصفبة الأخير ونترك الكل ينضج حوالي 20 دقيقة . بعد اطفاء النار نضيف القليل من الدبشة.


وعند التقديم نضيف القليل من المحتوى المطحون مسبقا "نجمع طماطم و الفلفل الخض حار و حلو و الدبشة وفص من الثوم ونطحنهم جميعا " في طبق كل شخص مع زيت الزيتون والقليل من الدبشة.




***** الدوبارة الصيفية نحضر الحمص أو الفول بنفس الطريقة و كدالك الصوص الا أننا نلغي المرحلة الثالثة
يمكن التحكم في كمية الحار المضافة حسب الذوق لكن لا بد من القليل من الحرور و نحتفظ ببقية الطريقة
