المقادير :

2كاسه طحين ابيض / 1/4 كاسة طحين بر ( أسمر ) /بينج بودرملعقة أكل / ذرة ملح / شوية زيت

( وممكن مضاعفة الكمية )

لحم مفروم ويعمل بالطريقة العادية
يعصج اللحم المفروم على النار ثم نضع البصل الى ان يذبل ثم الملح والفلفل الاسود ونطفىء النار ونضع البقدونس والان جاهز للحشو


الطريقة :

نحط الطحين في زبدية ونضع عليه الملح والزيت ونخلطهم قليلاً

ثم نضيف الماء بالتدريج وتعجن ( بماء قليل ) حتى تتكون لدينا عجينة

متماسكة وتترك لترتاح على الأقل 1/2 ساعة ثم نبدأ عمل السمبوسة بالطريقة العادية وهي تفرد


العجينة وتحشى وتقص وممكن تبرمين طرفها اذا حبيتي ترص في صحن

مرشوش بالطحين تدخل الفريز حتى تجمد ثم تنزع وتوضع في كيس اذا بغيتي

تفرزنينها أو ممكن تقلينها على طول وتكون بهذا الشكل

و بعض المراقي و الملخية و معجونات الفطائر..
ولا تجد المطلو ع الجزائري و البقيطة البرزيانية لأنهم أصلا لا يأكلون خبزا مع الروز و تشتاق لسفنج و لكرواص و لبتيبا أشكلا..
