الفرق بين الزيتون الاخضر و الاسود

يعتقد البعض أن هناك أشجاراً تنتج زيتوناً أسود وأشجاراً تنتج زيتوناً أخضر
ولكن هذه المعلومة خاطئة !!!
إذ أن كل ألوان الزيتون يمكن أن تكون حصيلة شجرة واحدة 00 مع اختلاف الأنواع فقط بين أشجار الزيتون


فكل الزيتون يبدأ باللون الأخضر ثم يتحول إلى البني فالبني المحمر ثم الأسود وهو أقصى درجات النضوج
ويتميز الزيتون الأخضر أنه يحتوي على سعرات حرارية أقل ( 120 سعرة حرارية في كل 100 غرام مقابل 230 سعرة حرارية في حالة الأسود )

فكلما كان الزيتون أكثر نضوجاً وبالتالي أغمق لوناً كلما احتوى مقداراً أقل من الماء وازداد بالتالي تركيز الزيت به
ولكن أيهما أفضل ؟؟؟
الأسود الناضج طبعا
لأنه يحتوي على زيت أكثر 000 وبالتالي فهو صحي أكثر
فكلنا يعلم فوائد زيت الزيتون الغنية عن التعريف 000 حيث أنه من أهم الوسائل لمحاربة الكوليسترول

وفي كلا اللونين فالزيتون يعتبر مصدراً جيدا لفيتامين هـ ( E) وفيتامين ج ( C )

في كتابها تاج الصحة في النبات تقول الدكتورة عزيزة عبدالعزيز فراج أن الزيتون من الأشجار التي لا تنحصر فائدتها في ثمارها فقط بل يمكن استعمال منقوع أوراقه في علاج الجروح وتطهير القروح وعلاج البواسير كما أن منقوع الأوراق المركز يستعمل في علاج آلام الأذن الخارجية وأمراض اللثة والحروق.وثبت حديثاً أن مغلي أوراق شجر الزيتون مفيد في خفض ضغط الدم المرتفع خلال 20 إلى 30 يوماً من استخدامه.. ويستعمل منقوع أزهاره في علاج الإسهال والحمى. والزيتون الأخضر أو الأسود بعد تمليحه غني بالمواد الدهنية والبروتينية والمواد المعدنية والفيتامينات مما يجعله غذاء ممتازاً .. وزيت الزيتون يعتبر من أهم وسائل تنظيف الأمعاء ومعالجة اللثة وهو نافع لتقوية القلب مذيب للكوليسترول المترسب على جدران الأوعية الدموية ومنشط لإفراز العصارة الصفراوية من الحويصلة المرارية. ومن الوصفات العلاجية أنه إذا مزجت المستكه مع زيت الزيتون ودهنت بها الشفاه المتشققه يسرع في شفائها. ويستعمل زيت الزيتون موضعياً لتنعيم البشرة والوقاية من التجاعيد.. ويحتوي مائة جرام من الزيتون الأسود على 191 سعرا حراريا و 1.8 جرام بروتين، 21 جراماً دهون، 2.6 كربوهيدرات، 1.5 جرام ألياف، 77 ملجم كالسيوم، 17 ملجم فسفور، 1.6 ملجم حديد، 750 ملجم صوديوم، 72 ملجم بوتاسيوم، 0.3 ملجم زنك، بالإضافة إلى كميات كبيرة من فيتامينات ب1، ب2، نياسين وفيتامين أ. ويقدم عبداللطيف عاشور في كتابه "الأعشاب طبيبك الطبيعي" الكثير من الوصفات العلاجية باستخدام الزيتون وزيته.. نذكر منها: لإزالة تجاعيد الوجه والرقبة نستخدم مزيجاً من نصف ملعقة من الزيت وصفار بيضة وبضع نقاط من عصير الليمون .. ويستعمل الخليط على شكل قناع في المناطق المراد علاجها ويزال القناع بعد ثلث ساعة بماء فاتر.. ويستعمل زيت الزيتون لدهان الجسم حفاظاً عليه من التأثر الناجم عن التعرض لأشعة الشمس.. ويفيد زيت الزيتون مفردا كدهان في علاج الخراريج والدمامل وتشقق الأيدي. ويستخدم الزيت كذلك لوقف تساقط الشعر وذلك بأن تدلك به فروة الرأس كل مساء ولمدة عشرة أيام. ولعلاج تشقق الأرجل يستخدم دهان مركب من الزيت والجلسرين بكميات متساوية. وفي كتابها "النباتات والأعشاب الطبية كيف نستخدمها؟" .. تقول الدكتورة فايزه محمد حمودة إن زيت الزيتون يستخدم كدهان لمعالجة بعض أنواع الأكزيما.. كما يفيد في علاج التشنجات العضلية حيث يدفأ زيت الزيتون على النار إلى درجة حرارة محتملة ويستعمل كدهان موضعي على الجزءالمصاب. ويستعمل الزيت كملين للجهاز الهضمي في حالة الإمساك الناتج عن التوتر العصبي كما يفيد تناول الزيت الطازج يوميا في علاج الحصى الصفراوية.. ويفيد تناول الزيتون في تقوية الإبصار لاحتوائه على الكاروتين..
