كوب دقيق أبيض ممتاز
6 ملاعق طعام حليب بودرة
2 ملعقة طعام بيكنج بودر
نصف كوب سكر
نصف ملعقة صغيرة ملح
ملعقة طعام خميرة
ربع كوب زيت
ماء دافئ للعجن
لوح الزبدة "زبدة مجمعة على شكل لوح "
الدهن :
ملعقة كبيرة حليب بودرة
ملعقة من الماء
ربع ملعقة سكر

انخلي الدقيق و ضيفي كل المقادير الجافة عليه ثم اعملي حفرة وسط الدقيق .
ضعي الزيت في حفرة الدقيق و افركي بالأصابع , حاولي رفع يديك أثناء العجن إلى الأعلى ليدخل الهواء للعجين .
بعد أن يتحلل ويمتزج الزيت بالدقيق تماما إصنعي حفرة ثانية واسكبي فيها الماء الدافىء بشكل تدريجي و اعجني بعد كل إضافة حتى تتكون لديكِ عجينة لينة و متماسكة بعد ذلك اتركي العجينة تتخمر و ترتفع لمدة ساعة تقريباً في مكان دافئ .
بعد أن تختمر العجينة إعجنيها جيدا ثم بتسويتها على شكل دائرة كبيرة ثم ضعي في ثلثيها فقط الزبدة الجامدة , ووزعيها جيدا على هذا الجزء من العجينة ــ أي الثلثين ــ بينما الثلث المتبقي يجب أن يبقى فارغا لنغطي به نصف الجزء المغطى بالزبدة وانتبهي فالزبدة لا يجب أن تكون جامدة تماماً من المجمد أو الفريزر حتى لا يتمزق العجين , بل يجب أن تكون طرية و لكن باردة ووزعيها جيدا كطبقة جامدة فوق طبقة العجين
الآن إثني أو اطوي الثلث المتبقي الفارغ من العجين فوق الزبدة لتتشكل لك دائرة مغطاة كلها بالزبدة أحد نصفيها مغطى والآخر لا واضغطي بأصابعك على هذا النصف المطوي حتى تصلى إلى الأطراف وتخرجي كل الهواء من العجين و افرديها جيداً , و لو خرجت منك الزبدة أثناء عملية إخراج الهواء فليست مشكلة بعد ذلك إطوي الجزء المطوي سابقا والمحشو بالزبدة طبعا على الجزء الغير المطوي والمغطى بالزبدة هو الآخر
أتركي العجينة قليلاً في الطبق و غطيها مدة عشر دقائق ثم أعيدى تسويتها بالكامل وأعيدي طويها , ثم تسويتها وأخيرا اطويها و كرري العملية ثلاث مرات فقط ولا تنتظري بين كل مرة وبعد انتهاء عملية الطي والتسوية اتركي العجينة لترتاح مدة ربع ساعة تقريباً
اقطعي العجين بالسكين لأربع أرباع , ستلاحظين أن العجين أصبح طبقات أمامك بدون أي مجهود كبير على الإطلاق
خذي كل ربع وسويه مرة ثانية كدائرة كبيرة و قومي بتقسيمها على شكل مثلثات باستخدام السكين أو قطاعة العجين
نأخذ واحد من المثلثات ونلف ابتداء من القاعدة لنصل إلى الطرف ويكون اللف برفق دون ضغط شديد
امزجي مقادير الدهن و ادهني بها الكرواسون بعد وضغه بالصينية المدهونة بالزيت ستكون النتيجة أفضل من استخدام البيض ونتركها تتخمر و تنتفخ مدة عشر دقائق صيفا ونصف ساعة شتاء

يمكن حشو العجين بأي مكون تراه مناسبا كالشوكولا أو زبدة الفستق أو غيره
يمكن تزيين الكرواسان بأي شيء تراه يناسبك مثل اللوز أو مسحوق الكاوكاو أو الجوز أو غيره
