المقادير:

2 ملعقة كبيرة بقدونس مفروم
صفار البيض
150 غرام جبن فالبريسو
كوب ماء دافىء
كوب زيت ذرة
ملعقة صغيرةخميرة حلوة
ملعقة صغيرة ملح
ملعقة كبيرة خميرة فورية ناعمة
2.5 كوب طحين (دقيق)
2 ملعقة كبيرة فلفل اخضر مفروم ناعم
ملعقة كبيرة سمسم



طريقة التحضير:

- يوضع الطحين (الدقيق) في وعاء الخلاط، ويضاف إليه الخميرة، الملح،خميرة الحلوة، الزيت والماء. يثبت مضرب العجين ويعجن الخليط لمدة بضع دقائق حتى يتم الحصول على عجينة ناعمة. تغلف العجينة بكيس من النايلون وتترك لمدة 30 دقيقة.

- يوضع جبن فالبريسو في طبق عميق ويضاف إليه صفار البيضة، والبقدونس والفلفل الأخضر، ويقلب الجميع حتى يختلطوا جيداً.

- تخرج العجينة من الكيس وتقطع إلى 20 كرة صغيرة، وتفرد كل واحدة مثل القرص.

- يوضع قليل من خليط الجبن فوق االعجينة، وتلف العجينة على هيئة سندوتش صغير مغلق، ثم توضع في صينية واسعة، وتغلف الصينية بالنايلون وتترك لمدة 30 دقيقة.

- يسخن الفرن على درجة حرارة 210 مْئوية.

- يرفع الغطاء النايلون من على الصينية ويمسح سطح الساندوتشات الصغيرة ببياض البيضة،وينثر فوقها السمسم، وتخبز في الفرن لمدة 12 دقيقة حتى تصبح ذهبية اللون.

- تقدم الفطائر الصغيرة كطبق خفيف وشهي.
