كبسة الدجاج السعودية



لعشاق الكبسة الشهيرة في المطبخ السعودي ،،، كبسة الدجاج اللذيذة ،،

المقادير



3 كوب أرز كبسة او بسمتي
6 ملعقة كبيرة سمن أو زيت
3 حبة كبيرة بصل، شرائح رقيقة
1 كيلو أو أكثر دجاج، مقطع 8 قطع
3 حبة كبيرة طماطم، مقشرة، بدون بذور، مفرومة.
1/4 كوب معجون طماطم
2 حبة لومي، مجفف
6-8 فصوص هيل، صحيح
2 عود قرفة
4 فصوص مسمار (قرنفل)
2 ورق غار
4-6 فصوص فلفل أسود، صحيح
4 ملعقة صغيرة ملح
2 ملعقة صغيرة بهارات الكبسة
الطريقة
1) اغسلي الأرز وأنقعيه في ماء دافئ لحوالي 40 دقيقة.
2) أحضري القدر متوسط الحجم، اضيفي السمن أو الزيت، سخني على نار
قوية، اضيفي البصل، قلبيه على النار الى ان يصبح ذهبي اللون .
أخرجي البصل واتركيه جانباً;.
(احتفظي بحوالي نصف مقدار البصل المحمر للتزيين لاحقاً.
3) اضيفي قطع الدجاج الى نفس الزيت الذي في القدر، قلبيها على نار قوية
4-5 دقيقة الى ان يكتسب الدجاج لون ذهبي .
4) أضيفي نصف مقدار البصل المحمر، الطماطم المفروم، معجون
الطماطم، و4 كوب ماء، أضيفي اللومي، الهيل، القرفة، المسمار.
5) غطي القدر واتركيه على نار هادئة حوالي 40 دقيقة الى ان ينضج
الدجاج.
6) اضيفي بهارات الكبسة، قلبي الى ان تختلط مع الدجاج.
7) صفي الأرز من ماء النقع، ضعيه على سطح الدجاج، قلبي بهدوء،
يجب أن يكون المرق حوالي 1سم فوق سطح الأرز، اضيفي مزيد
من الماء المغلي إذا احتاج الأمر، تذوقي الملح.
دعي القدر على نار قوية الى ان يغلي بقوة 2-3 دقيقة الى ان يتشرب
المرق.
9) غطي القدر ودعيه يطهي على نار هادئة جداً; لحوالي 40 دقيقة
الى ان يتسكر.( ضعي صفيحة معدنية اسفل القدر).
10) ضعي الكبسة في طبق التقديم، وزعي البصل المحمر على السطح ،
زيني الطبق حسب الرغبة.

• للحصول على طعم اللومي،، اغرزي طرف السكين في حبة اللومي
لكي تثقبيها قليلاً; قبل استعمالها،، ذلك يساعد على خروج مزيد من
النكهة الحامضة والقوية أثناء الطهي.
• بهارات الكبسة هي عبارة عن خلطة من البهارات المطحونة،،
يتم اعدادها منزلياً;،، كما تتوفر دائماً; في الأسواق الخليجية.
