المراد تقشيره فى ماء بارد قبل التقشير

للتخلص من روائح الثلاجة

احيانا تطرأ بعض الروائح غير المستحبة فى الثلاجة

ولعلاج ذلك يتم غلى قليلا من الخل الابيض على

النار وبعد أن يبرد تماما يوضع فى الرف الاوسط

وتغلق الثلاجة 12 ساعة ثم تنظف بالماء الساخن

المضاف اليه قليلا من بيكربونات

الصوديوم (وبدون صابون)

لتطرية شرائح البفتيك المعدة للشى ،

يتم اضافة قليل من الخل اليها وتركها لعدة

ساعات قبل القيام بعملية الشى .

يمكن إضافة قليل منه الى الماء ، فاذا احدث

فورانا فأنه يكون صالحا اما اذا لم يحدث هذا

التفاعل فهذا دليل على انتهاء صلاحيته

افضل طريقة لشى اللحوم والاسماك

يتم وضع صينية بها ماء مغلى أسفل الشواية

لأن ذلك يساعد على امتصاص الدخان المتصاعد

من الشىء بدلا من انتشاره بالمطبخ ، كما أن

نثر قليلا من الملح فى الصينية الموجودة اسفل

الشواية يساعد على عدم احتراق المادة الدهنية

الناجمه عن عملية الشى ، ولإختصار وقت عملية

الشى يمكن شق اللحوم بسكين حاد بخط مائل

اللحوم والدواجن المجمدة

يتم إخراجها من الفريزر قبل عملية الطهى

بنحو 12 ساعة ووضعها فى رف الثلاجة الاسفل ،

ومن الاخطاء الشائعة وضعها فى ماء ساخن

لسرعة ذوبانها لأن ذلك يؤدى الى تشقق الانسجة

الرابطة ويفقدها المذاق الشهى ، كما أن الثلج

الذى لايزال عالقا باللحوم سيستهلك جزءا كبيرا

من حرارة الطبخ . ولا يصح بأى حال من الاحوال

إعادة تجميدها مرة أخرى . لأن بعضا

من صفاته قد تغيرت

اضافة الملح للطعام

يفضل اضافة الملح الى الطعام قبل نهاية

عملية الطهى بقليل ، لأن ذلك من شأنه أن

يساعد على اختصار وقت الطهى والحفاظ

على القيمة الغذائية للطعام .

عند انسكاب الصلصة أو الدهون

بفرن البوتاجازأو الميكرويف

قد يحدث هذا اثناء اعداد بعض المأكولات ،

مما قد يؤدى الى انبعاث الدخان من الفرن ،

يتم غلق الشعلة وتسكب كمية من الملح على

المكان الذى سقطت عليه الصلصة أو الدهون

مع مراعاة أن يكون الفرن مازال محتفظا بحرارته ،

وبعد دقيقة واحدة يزال الملح بقطعة

قماش أو أسفنجة نظيفة

ويمكن وضع اناء به كوب من الماء المغلى

وتركه يستكمل عملية الغلى فى الفرن وذلك لعدة دقائق ،

اذ ان البخار المتصاعد يساهم فى اذابة بقايا

الطعام الملتصق ، ثم تستكمل عملية التنظيف

بأستخدام قطعة قماش مغموسة فى الخل
