تتعدد الزيوت في الاسواق وتختلف انواعها فيصعب اختيار النوع الافضل لنا لذلك تقول رئيسة قسم التغذية في جامعة تروب كاثرين اتسيوبولس يعتمد اخيار نوع الزيت على الهدف من استخدامه وتضيف "بالنسبة للفوائد الصحية بشكل عام، يعتبر زيت الزيتون البكر الممتاز أفضل خيار، مع أنه يحتوي كمية من الأحماض الدسمة المشبعة (12%)، إلا أنه من الزيوت القليلة غير المكررة والتي تحتفظ بمضادات الأكسدة الموجودة في الزيتون قبل عصره" وتعتبر الزيوت النباتية اكثر صحيا من الشحوم الحيوانية كالزبدة والشحم لاحتوائها على كمية قليلة من الاحماض الدسمة المشبعة والتي تضر القلب وايضا تحتوي على كمية اكبر من الزيوت الاحادية غير المشبعة المفيدة للقلب وعن الكميات المناسبة للاستخدام، أضافت اتسيوبولس أنه، "يمكن تناول ملعقتين أو ثلاث يومياً من زيت الزيتون البكر الممتاز وتعتبر هذه الكمية مقبولة وتحافظ على التوازن الصحي للطعام، كما يمكن تناولها حتى في حميات التنحيف" و يفضل استعمال زيت الزيتون مع المأكولات الباردة، كالسلطات وعدم استعماله في القلي وذلك للحفاظ على مضادات الأكسدة التي يحتويها والطريقة المثلى للحفاظ على الزيت من التلف ان نحتفظ بالزيوت في الاماكن الباردة وبعيدا عن الضوء ويفضل الاحتفاظ بة في علب معدنية .

اهلا بك لو عرفتي ما يحمل زيت الزيتون من فائدة ما قلتي هذا
ولعلمك انا اشرب زيت الزيتون صباحا في الكاس على الريق وندير بيه طمينة وناكلوه في السلائط والحبوب بدون زيت الزيتون عندنا لا تجوز مثل الحمص والعدس واللوبيا
