السلام عليكم و رحمة الله تعالى و بركاته

مع إقتراب الشهر الفضيل حببت فتح هذا الموضوع لتبادل الأفكار ووضع نصائح خاصة بمائدة رمضان تهمنا و أتمنى من الأخوات المشاركة الدقيقة الفعالة و إختصار نصائحهن و تجنب قدر الإمكان تقنية نسخ لصق

منذ أيام شاهد موضوع في المنتدى لإحدى الأخوات قامت بحفظ البزلاء في قارورة خاصة بالمشروبات دون غليها و لأن هذه الطريقة خاطئة و غير صحية أبدا أحببت التصويب و فتح هذا الموضوع لكم

حفظ البزلاء و الذرى في الثلاجة

بعد تقشيرها تغلى في ماء خمس دقائق تقريبا ثم تنقل إلى ماء بارد جدا لإيقاف عملية الطهو و الحفاظ أيضا على نضارة البزلاء و لونها الأخضر الزاهي و تترك لبعض الوقت ثم نرفع الحبات التي طفت على الماء جانبا ثم نصفي التي بقت في القاع من الماء جيدا و توضع في كيس بلاستيكي غذائي و تحفظ في المجمد
و بنفس الطريقة يمكن تجميد الذرى الطازجة بعد فرك حبيباتها من الجذع الذي كانت متراصة فيه ثم تغلى و تصفى و تحفظ في المجمد لإستخدامها في السلطات أو الشوربة

اهلا بك حبيبتي انا صاحبة القارورة ما الخطاء فيها غاليتي هي تحفظ دون غسلها لكي لا تلتصق وعند الاستعمال من الثلاجة الى الماء وتغسل وطريقتك معروفة عند االجميع انا كنت استعملها وطريقتي جديدة ومضمونة والقارورة ليست للمشروبات هي قارورة للماء لكن اعطيني اين الخطاء فقط في طريقتي مشكورة
كل ما أستطيع إفادتك به يا أختي الكريمة أن عملية تجميد الخضار كما اللحوم في البيت دقيقة جدا و تحتاج لطهوها بعض الوقت قبل عملية حفظها للحفاظ على لونها و نضارتها و طراوتها و قيمتها الغذائية نهييك عن التخلص من الشوائب و الحبات الصغيرة الفارغة و بتالي حفظها لأطول فترة ممكنة قرابة الست أشهر على أكثر تقدير عكس التي نبتاعها من السوق و التي هي في الأساس محضرة بنفس الطريقة فقط هي مغلات في ماء غير كلسي لهذا مدة صلاحيتها طويلة تتراوح بين سنة و سنتين
طريقتك لم أجربها و هذه الطريقة أراها أصوب و أصح لعدة إعتبارات وضحتها في الأعلى عدى أنها متبعة في كثير من المطابخ و المطاعم كما يحبذها أكثر إختصاصي التغذية

طريقة تعليب الفلفل الأحمر الحلو و عمل الهريسة بنوعيها الحلو و الحار

تعليب الفلفل

يشوى الفلفل الأحمر الحلو ثم يوضع في كيس بلاستيكي يعرق ثم يقشر دون غسله ثم يزاح البذر منه و يوضع في برطمان معقم و يضاف عليه كمية مهمة من زيت الزيتون ثم يغلق البرطمان و يقلب على فمه ثم يوضع في ماء مغلي لبعض الوقت ثم يرفع يحفظ في البراد

طريقة التعقيم

طريقة تعقيم البرطمانات الزجاجية توضع في ماء مغلي لبعض الوقت ثم ترفع و تقلب على فمها دون مسها أو لمسها من الداخل باليد تجنبا لأي تعفنات قد يتسبب فيها التدخل اليدوي

عمل الهريسة الحلوة الحارة الخشنة و الناعمة

كيلو فلفل أحمر حلو مشوي و مقشر مضاف إليها رطل فلفل إحمر حار مشوي و مقشر راس ثوم مشوي في الفرن زيت زيتون ملح ثم نضع هذا كله في مطحنة كهربائية و نطحن بشكل متقطع حتى نتحصل على قطع قطع صغيرة من الفلفل ثم تحفظ في برطمان معقم في البراد أو في خزانة المطبخ مدة ست أشهر إلى سنة
أما في حال ما إذا أردنا الهريسة تكون ناعمة فتطحن جيدا مع إضافة م ص كراوية و كزبرة مطحونة و تحفظ بنفس الطريقة الموضحة في خزانه المطبخ أو البراد

الهريسة التونسية

المقادير

1 كلغ فلفل أحمر جاف (مجفف عند الشمس)
ماء مغلي
فنجان زيت زيتون
راس ثوم
م ص ملح
نصف م ص كروية
م ص تابل (كزبرة و كمون)

التحضير

ننقع الفلفل في الماء المغلي و نتركه مدة 10 د 15 د ثم يصفى و ينقى من البذور (و إلي تحبها حارة كثيييييييييييييييييير كيما تاعهم تخلي شوية بذور) ثم يوضع الفلفل و الثوم في المطحنة و يطحن جيدا مع زيت الزيتون و الملح و الكروية و التابل ثم تحفظ في البراد و خزانة المطبخ بعد تعليبها في برطمان معقم

أهلا و سهلا يا أم هديل و لكن من قال أن هذه القوارير الخاصة بالمياه و المشروبات معقمة ألا ينصح برميها بمجرد إستهلاك الماء و المشروبات التي بداخلها وعدم إستغلالها ثانية
