مقروط الشباك

أولا وقبل كل شيء، هذا النوع من المقروظ يعتمد في الأساس على شكل خاص من الغرابيل، والذي يكون على شكل مربع مشبك له اربع ارجل كما هو موضح في الصورة

المقاديـــــر:
العجينـــــة:
500 غ مرغارين.
2 كيلات سميد + 1 كيلة فرينة ( الكيلة تكون بعلبة المارغارين بعد تفريغها).
2 كيس خميرة كيميائية.
القليل من الملح
ماء زهر

الحشــــو:
تمر غرس مرحي
كمية من القرنفل مطحون ( طيب)
كمية من القرفة مطحونة
جلجلانية محمصة ( السمسم)
تخلط المكونات جيدا مع اضافة القليل من ماء الزهر مع مراعاة ان تاخذ الحشوة قوام متماسك.


طريقة التحضير:
-نخلط مكونات العجينة ( المكونات الجافة مع بعضها) وبعد ان نذوب المارغارين نضيفها الى باقي المكونات ونخلط جيدا، ثم نغطيها بكيس بلاستيكي ونتركها ترتاح مدة ليلة كاملة لكي يتشرب السميد المارغارين جيدا
في اليوم المقبل نأتي بالعجينة ونرشها بماء الزهر شيئا فشيئا ونقوم بعجنها قليلا الى ان نحصل على عجينة متماسكة.
فيما بعد نقوم بعمل كويرات من العجينة اكبر من حجم صفار بيضة الدجاج بقليل ( انظر للشكل الموضح في الصورة)

- نأتي فيما بعد الى حشوة التمر،نقوم بعمل اشكال بسمك الخنصر لكن اقل طولا منه بقليل( كما هو موضح في الصورة)

- نأخذ كويرة من كويرات العجين ونقرصها قليلا بين اليدين.

- نضع قرصة العجين على الغربال ونكمل التقريص دون الضغط عليها بقوة، وباليد الاخرى التي تكون تحت الغربال نقول بتمريرها على القرصة لازالة باقي العجينة الذي يخرج عبر ثقوب الغربال.

- نضع اصبع من حشوة التمر على القرصة.

- ثم نقوم بلف العجينة عليه بتأني.

- بعد الانتهاء من اللف نقوم بالضحط على الجواب قليلا لنتحصل في الأخير على هذا الشكل المغزلي مع الملاحظة أن وجه حبة المقروظ اخذ شكل ثقوب الغربال.

- نصف حبات المقروظ في صينية ونضعها في الفرن لتطهى ويأخذ اللون الذهبي مدة 20 الى 25 د .

بعد ان يستوي نتركه يبرد، ثم نقوم بتحضير قطر من العسل الساخن وقليل من ماء الزهر، ونسقط حبات المقروظ في هذا القطر وندعها تتشرب قليلا ثم نصفيها من العسل الزائد ونضعها في " كيسلات" ونزينها بالجلجلانية ( السمسم) قبل ان يجف العسل.
