السلام عليكم ..

اليوم جبلتكم تحلية اسمها الجزيرة العائمة « ILES FLOTTANTES »

هذه التحلية تحضر على 3 مراحل أو خطوات

CREME ANGLAISE - - MERINGUE -
CARAMEL



المقادير:

3 بيض - سكر ( على 3 مراحل 100غ + 80 غ + 60 غ ) ½ ل حليب - فانيليا

الطريقة:

CREME ANGLAISE

نسخن الحليب مع الفانيليا

نفصل البياض عن الصفار ، في وعاء نخلك 3 صفار بيض مع 100 غ سكر و نخلط جيدا حتي يرجع أبيض باهت ثم أضفت ملعقة ميزينا و نخلط - الحليب سخن نصب مقدار 3 معالق كبيرة على خليط البيض و نخلط و نكرر حتي نكمل كل الحليب
( السر في اضافة الميزينا لأن المرة الأولي خربلي الخليط ) و نرجعو الخليط فوق النار و نخلط بالملعقة الخشبية حتي يثقال نصبو في DES RAMMEQUINS و نغطيهم بال PAPIER FILMS و نحطو في الثلاجة

MERINGUE

في كسرول نحط الماء حتى الغلايان

في وعاء الخلاط عندنا 3 بياض بيض + قرصة ملح نضربهم مليح حتي يرجع مثل الثلج ثم نضيف 80 غ سكر و نتابع الخلط و الميرانغ جاهز..
نغرف كمية و نحطها في الماء يغلي نتركها مدة دقيقة تم نقلبها على الجهة الاخرى نضعها فوق ورق نشاف PAPIER ABSORBANT

CARAMEL :
نحضر الكراميل عادي 60غ سكر مع 2 معالق ماء فوق النار حتى يشقار
و نبدأ التركيب:
نخرج les rammequins من الثلاجة و نضع قطعة من الميرانغ فوق الكريمة ثم نرسم خطوط من الكراميل فوق الميرانغ و نزين بالمكسرات انا استعملت اللوز.

يا حبذا لو تصورينا لنا مستقبل طريقة خيوط السكر لي راكي عاملتها لم تذكريها في طريقة التحضير...اعرف انها تحضر بشوكتين و لكن قوام السكر او الكراميل لا اعرف كيف يكون...

بالنسبة لخيوط السكر الكرميل نفسه و تصنع ليس شرط الشوكتين المهم يكون عودين " حتى الحلال ينفع " غير أنهم يثبتو من جانب واحد مع إرتفاعهم 20 سم من القاعدة ندهن العودين بالزيت و الكراميل يكون دافىء و بوسطة مضرب الشبك اليدوي إغمسه في الكراميل و اعملي خطوط بالعرض لازم تكون يدك خفيفة حتى تكون الخطوط رفعية و لي عودة في الموضوع عندما تسمح المناسبة
