مقادير المكدوس:

2كغ_من البانجان الأسود حبة صغيرة

نصف كغ من معجون الفلفل الاحمر(او تجيبين فلفل احمر وتثرمي ناعم)

رأس كبير من الثوم المفروم ناعما
نصف كغ من الجوز المفروم خشنا

ليتر من زيت الزيتون



الطريقة:

نقمع رأس البانجان بنزع الرأس باليد وليس بالسكينة ثم يغسل


يشق البانجان بالطول دون أن يصل إلى الطرف الآخر

نغلي الماء ونضع فيه البانجان مع التقليب المستمر حتى يستوي وذلك بالضغط على البانجان بالإبهام و السبابة و تشعري بقرب الإصبعين على بعض

ثم نصفي الماء ونملح البانجان من الداخل و الخارج

ثم نصفهم في المصفاة بالترتيب

ثم نثقل عليه وندعه على هذا الحال لمدة يومين

ثم نجهز الحشوة بخلط الثوم و الجوز والفلفل ونقوم بحشو الباذنجان

ثم نضعهم بمرطبان نظيف

ثم نقلب المرطبان على فمه لغاية اليوم الثاني ثم نقلبه ونضع عليه الزيت حتى يغمره جيدا

ثم يحكم إغلاقه ولا يفتح ويؤكل إلابعد إسبوعين
