طاجين الزيتون

[اسماء ماريبال]

المقاديرهي دجاجة , كوب من الزيتون المنزوع النوى , رطل جزر, 1 بصلة متوسطة, 1 ليمونة, ملعقتان ك من الفرينة ,3 م ك من الزيت , نصف ملعقة صغيرة من الزعفران , ثلث ملعقة ص قرفة ناعمة ,ثلث ملعقة ص من الكمون, فلفل اسود ملح وماء .
الطريقة:
قطعي الدجاجة الى اطراف وضعيها في قدر مع البصل مقطع رقيق, الزعفران, الكمون ,القرفة الفلفل الملح والزيت ثبتي القدر على نار هادئة وحركيه بين الحين والاخر حتى تتقلى قطع الدجاج و يذبل البصل ثم أضيفي الماء أو مرق الدجاج , أضيفي الجزر مقطع دوائر مائلة جميلة ثم غطيها ودعيها تنضج مدة 40 دقيقة دون ان تنسيى تحريكها في هذه الاثناء اسلقي الزيتون مرتين اتنزعي ملوحته ثم القيه بالقدر ولما ينضج الكل نصل إلى المرحلة الأخيرة اعصري الليمون و أضيفي له الفرينة و أخلطي جيدا حتى لا تتكون حبيبات الفرينة بحيث يكون الكل مقدار كوب صغير إلى متوسط حسب مقدار المرق المراد تركه , أضيفيه للقدر ودعيه يغلي لحظات حتى تصبح المرقة عاقدة نوعا ما و أطفئي وقدميه.
