معكرونة السباغتي بالباذنجان وصلصة الطماطم

المقادير:


لتحضير الصلصة:

1 كلغ طماطم طازجة
4 ملعقة كبيرة زيت زيتون
1 بصلة صغيرة الحجم، مفرومة
1 حبة باذنجان صغيرة الحجم، مفرومة
2 فصّ ثوم، مطحونة
50غ براعم الكَبر، مفرومة
5 شريحة سمك الأنشوفة، مفرومة
1 كوب ماء
1 مغلف أسرار خلطة البولونيز ماجي
2/1 1 ملعقة صغيرة زعتر مجفف
1 ملعقة صغيرة سكر
فلفل أسود مطحون وملح (حسب الرغبة)


لتحضير المعكرونة:

8 كوب أو 2 لتر ماء
2/1 كلغ أو 500غ معكرونة طويلة
2/1 ملعقة صغيرة ملح

للتزيين: 50غ جبنة البارميزان، مبشورة


طريقة التحضير

تغسل الطماطم وتنظف وتقطع إلى مكعبات.

تخلط الطماطم في خلاطة إلى أن تشكل مزيجاً.

يحمى الزيت في قدر كبيرة، يضاف البصل والباذنجان، يطهى المزيج لمدة 7 دقائق، يضاف الثوم وبراعم الكبر والأنشوفة ويطهى المزيج لدقيقتين إضافيتين.

تضاف الماء ومزيج الطماطم وأسرار خلطة البولونيز ماجي والزعتر والسكر والفلفل الأسود المطحون والملح.

تطهى صلصة الطماطم على نار خفيفة لمدة تتراوح بين 10 و15 دقيقة.

في هذا الوقت تغلى الماء مع الملح وتضاف إليها المعكرونة وتطهى لمدة تتراوح بين 10 و12 دقيقة إلى أن تطرى المعكرونة.

تصفى المعكرونة وتسكب على طبق حامٍ .

تسكب صلصة الطماطم فوق المعكرونة وترشّ عليها جبنة البارميزان.
