2 كأس أرز نيء
2 كأس ماء
4 ملاعق كبيرة خل أرز
3 ملاعق كبيرة سكر
1 ملعقة كبيرة ملح
الخطوات:
1-لتحضير التيزو (خل السوشي)يخلط كأس ماء مع 2ملعقة كبيرة خل الأرز وملعقة كبيرة ملح،وتترك جانبا.
2-يغسل الأرز عدة مرات حتى تصبح المياه صافية .
يوضع في مصفاة ويترك ليصفي حوالي ساعة.ينقل الأرز
لإناء ثقيل أو إناء طهي الأرز الكهربائي وتضاف باقي كمية الماء وتأكد من تغطية الأرز بغطاء محكم
واتركيه حتى يغلي.ثم تقلل درجة الحرارة بحيث تسمح للأرز أن يطهي على البخار لمدة15 د مع تغطية
الإناء.يبعد الإناء عن النار ويرفع الغطاء لتوضع
قطعة قماش بيضاء فوق الإناء ويعاد الغطاء مرة أخرى ويترك بعيدة عن النار لمدة 15 دقيقة أخرى
ليستكمل النضج تحت تأثير البخار.
3-في أثناء طهي الأرز يخلط خل الأرز مع السكر والملح في آنية مع التقليب ويسخن المقدار حتى يذوب السكر ،ويترك جانبا ليبرد في درجة حرارة الغرفة.
4-بعد أن ينضج الأرز على البخار يقطع بملعقةخشبية
ببطء وبدون تحريك كثيرا حتى لايهرس.
5-تندى قطعة قماش بخليط التيزو (خل السوشي)وتمسح
بها جوانب آنية السوشي وهي آنية خشبية تقليدية
الشكل قاعها مسطح تسمى(oke)أو(hangiri).وتتميز
بأن الخشب يمتص الرطوبة الزائدة كما أن سطحها العريض يجعل الأرز يبرد بسرعة.
6-يوضع الأرز الساخن في الآنية ويضاف إليه التيزو
بسرعة ويفكك بطريقة التقطيع والتقليب وبعد أن يمتزجا تماما يوضع أمام الهواء ليبرد تماما.
وأيضا للتخلص من الرطوبة.ويستغرق ذلكـ حوالي عشر دقائق.
7-لايوضع الأرز في الثلاجة ويفضل أن يستخدم خلال ساعة من إعداده.ومن الأفضل تغطيته بقطعة قماش نظيفة في جو الغرفة العادي حتى تصنع اللفائف
