Tajine de chou-fleur (http://www.femmezoom.com/recette-1394.htm)
Ingrédients :
- 1kg d'agneau
- 1kg de chou fleur
- 2 oignons haché
- 1 tomates
- 1/2 verre à thé d'huile
- 1 cuillère à café de smen
- 4 gousses d'ail haché
- 1 cuillère à café gingembre
- 1 cuillère à café de poivre
- 1/4 cuillère à café de safran
- 2 cuillères à soupe de persil et coriandre haché
- Le jus d'1 citron
- 2 piments conservés
- Sel
Préparation
- Nettoyer soigneusement le chou-fleur; retirer les feuilles vertes, détailler-le en bouquets, faire-les blanchir dans l'eau bouillante salé pendant 15 minutes.
- Éplucher et épépiner le tomate, couper-le en petits morceaux.
- Faire chauffer l'huile dans une cocotte, y faire revenir les oignons haché, l'ail haché et la viande, assaisonner de poivre, gingembre, safran et sel, ajouter le persil et coriandre hachés, le smen et le tomate, mouiller avec l'eau et laisser cuire à couvert sur feu doux jusqu'à ce que la viande soit cuite, retirer la viande et réserver-la au chaud.
- Mettre le chou fleur dans la cocotte et laisser réduire la sauce sur feu moyen, rectifier l'assaisonnement, ajouter le jus de citron et remettre la viande pour réchauffer.
- Servir la viande dans un tajine, répartir les bouquets de chou fleur et napper de sauce et décorer avec le piment conservé.
- Servir aussitôt.

Gratin aux pommes de terre et viande hachée (http://www.femmezoom.com/recette-1380.htm) Ingrédients :
- 1kg de pommes de terre
- 500g de viande hachée
- 2 oignons hachés
- 4 cuillères à soupe de persil haché
- 2 cuillères à soupe d'huile
- 150g de gruyère râpé
- Sel, poivre, cumin, piment doux, piment fort, cannelle en poudre, gingembre
Sauce béchamel
- 750ml de lait
- 100g de beurre
- 3 cuillerées à soupe de farine
- 50g de fromage râpé
- 1 pincée de noix de muscade
- Sel et poivre
Préparation
- Pour préparer la sauce béchamel, faire fondre le beurre dans une casserole anti-adhérente sur feu doux, saupoudrer la farine en remuant avec une cuillère en bois, verser le lait graduellement sans cesser de remuer, assaisonner avec le sel, le poivre et la muscade, laisser cuire en continuant à remuer constamment jusqu'à l'obtention d'une sauce épaisse, hors du feu ajouter le fromage râpé, bien mélanger.
- Laver bien les pommes de terre et mettre-les avec leur peau dans une grande casserole d'eau légèrement salée, faire-les cuire pendant 20 minutes, une fois cuite, enlever la peau et passer-les au moulin à légumes.
- Mettre dans un saladier la purée de pommes de terre, 2 cuillères à soupe de persil haché, le poivre, cumin, piment fort, sel, bien mélanger.
- Dans une poêle, faire fondre les oignons hachés finement avec deux cuillères d'huile, ajouter la viande hachée, 2 cuillères à soupe de persil haché, le gingembre, le piment doux, le cannelle en poudre, le cumin, sel et poivre, faire remuer avec une cuillère en bois pour qu'elle se dissocie en petits grains.
- Beurrer un plat à gratin et mettre une couche de pommes de terre puis une couche de viande hachée, recouvrir avec la sauce béchamel, saupoudrer du gruyère râpé.
- Faire cuire le gratin dans un four préchauffé à 180°C jusqu'à ce qu'il soit doré.
- Servir chaud.
