200مشمش جاف 200غ برقوق جاف 200غ تين جاف 4حبات تفاح او عدد افراد العائلة 1000غ لحم بقري بلا شحم ولاعظم 300او400غ نواد كوكو 300غ فستق حلبي مهر مش 300غ لوز محمص ومهرمش 300غ زبيب 3عود قرفة 3ملاعق كبيرة ماء زهر وماء ورد 300غ
جوزمحمص ومهرمش 1ل ماء م ك زبدة رشة ملح 50غ سوريز كونفي اوما يسمى في المشرق كرز مسكر 100غ الى 200غ سكر ابيض
التحضير
1 نقوم بتفوير المشمش حتى ينضج ثم نطحه في المطحنة الكهربائية
حتى نتحصل على عجينة متماسكة نوعا ماودات الطريقة نتبعها مع البرقوق الجاف و التين
2 ثم نمزج المشمش مع مقدار 50غ نواد كوكو و ر م ص برش برتقا ل وم ص زبدة وم ص عسل دهبي حتى نتحصل على عجينة نشكلها كويرات متساوية الحجم ودات الشي نتبعه مع البرقوق والتين فقط نطيب البرقوق بالقرفة بودرة و التين كدالك لكن نكور كل نوع لوحده
3 ثم نضع في طنجرة الزبدة ونتركها تدوب ثم نضيف لها اللحم ونتركه يتشوح قليلا ثم نضيف القرفة عواد ونمرق بالماء ونتركه يغلي ثم نضيف السكر ونتركه يغلي قليلا ثم نضيف الزبيب ونغلق الطنجرة ونترك اللحم يتعسل مدة 20د ثم نطفىء النار تحته ونرفع عواد القرفة
ونطيبه بماء الزهر والورد
ثم نقوم بتجويف التفاح بعد ان نقسمها بالطول ثم ننقعه في ماء به عصير حامض حتى لا يتاكسد ثم نرفعه وندهنهعلى كامل سطحه الخارجي بالعسل ثم نمرره بالنواد كوكو حتى يتغطى كليا
4 ثم نضع كويرات المشمش في مرق تعسيلة اللحم ثم نخرجها و نمررها في الفستق المهرمش حتى تتغلف جميع الحبات عندها نرفعها ونتركها جانبا ودات الشي نفعله مع كويرات البرقوق اللدي نمرره في اللوز وكويرات التين الدي نمرره في الجوز ثم نضع اللحم في طبق التقديم في الوسط ثم نوزع كويرات الفواكه وداير مدار الطبق انصاف التفاح المجوف اللتي مررناها في النواد كوكو و نوزع وسط التفاح المجوف بعض كويرات الفاكهة وفوق حبة كرز مسكرة في كل نصف حبة تفاح ويقدم الطبق بعد ان نرشه برشة مكسرات مشكلة
ملاحظة
هدا الطبق جزائري تقليدي موروث من الدولة العثمانية وسمي طاجين الباي نسبة للباي اللدي كان يحكم مقاطعة الشرق الجزائري
وجدته في كتاب قديم جدا وجربته وهو حلو كتير كتير كما انه طبق فخم بتاع بشاوات زي ما يقولو الاخوة المصاورة واتمنى يعجبكم وينال رضاكم مثل ما عجبني وصار من اهم الاطباق اللتي اتحف بها ضويوفي في رمضان
كما يمكن حشو حبات المشمش بحبةكرز مسكرة
