من منا لا يعشق الوصفة التقليدية المشهورة و هي الرفيس التي نحضرها في المناسبات اترككم مع الصور الموضحة:



سميد و رشة ملح و كمشة كاوكاو و دهان ذايب







نبسوهم مليح باليدين







ثم ناخذ جزء من السميد و نرشه بحليب مخلوط بماء الزهر





و نخلط دون عجن







ثم نجمع على شكل دائرة او خبزة







و نسويها جيدا باليدين مع الضغط







ثم نقطعها الى مربعات





ثم نطيهيها فوق طاجين الحديد او الفرن







ثم نفتتها و نغربلها







بعدها نفوره في كسكاس و ندهنه بزبدة و عسل و نزينه بالقرفة و القرنفل

بالنسبة لسؤالك اختي سلام هو المعروف انع يصنه بالسميد الخشن مثل المقروط و لكن والدتي تحضره بالسميد المتوسط او العادي يعني هي لا تغربله...
و هذا الذي في الصور والدتي حفظها الله هي من حضرته احضرته معي لما كنت في قسنطينة و تركته في المجمد و لما اخرجته صار و كانه جديد فورته من جديد و اضفت له الجوز مكسر و سقيته بالعسل و التزيين كما ترين...
انه لذيذ جدا جربيه و لن تندمي...

لكن احنا نقوم بكل الخطوات التي ذكرتها ماعادا الاخيرة
بعد ما نغربله نديروا الغليظ في الحليب يطبخ والرقيق نديرو فيه الدهان وشوية سكر و نزوقو به هذاك الغليظ اللي طبخ في الحليب

بالرغم أنني لا أحب العجائن المزيّتة كالمسمّن و الملوي و الرقاق .. اذا كانت تلك هي الاسماء الصحيحة .. الاّ أنني أحب الرفيس ربما لأنه التفويرة تنزع تلك الزيوت..
في الشلف مثلا يُقدم هذا الطبق في الموت .. لا أدري لماذا..
و في بعض المناطق الرفيس هو الطمّينة.
